Rava Ladoo - Easy Rava Ladoo Recipe - Easy Diwali Sweets

Today we are going to see an easy rava ladoo recipe that's perfect for Diwali, Krishna Jeyanthi or for any family occasions. This recipe can be easily doubled if you are preparing in a large quantity. Good news, no condensed milk, no sugar consistency syrup and no milk are needed for this rava ladoo. There are many easy methods for rava ladoo but this is the traditional method my grandmother used to prepare which stays good for more than 2 weeks. 



Simply roast the rava and powder the rava and sugar separately in a mixer jar. And then combine the powdered rava, sugar along with roasted cashews and cardamom powder. Mix the dry ingredients well and then add melted ghee little by little. When it's warm enough to handle, prepare ladoos. Easy sweet recipe within 30 minutes with simple methods. 

Tips to make perfect Rava Ladoo

  1. To make soft rava ladoos, do not roast the rava for a long time. Roast until you get a nice aroma. 
  2. For this rava ladoo recipe, I suggest using fine rava. Please do not use the rava which are larger in size. Since we are going to powder them in a mixer jar, I recommend using fine rava which will be easy to shape the ladoos with perfect texture. 
  3. You must cool the roasted rava for 15 minutes and then powder it in a mixer jar. Do not powder them like flour. I always prefer semi fine texture. 
  4. For binding the ladoos we use ghee in this recipe. I do not prefer milk for binding as they do not have a longer shelf life.

Rava Ladoo - Easy Rava Ladoo Recipe Details

Prep time : 15 minutes

Cook time : 30 minutes

Yields ; 15 to 20 ladoos

Ingredients

  • 1 cup rava (fine rava)
  • 1.5 cups sugar
  • 1/2 cup ghee
  • 10 to 12 broken cashew nuts
  • few raisins 
  • 1/2 tsp cardamom powder

Cooking Directions

Heat a heavy bottomed kadai and add 2 tbsp ghee. Add the broken cashew nuts and raisins and roast well on medium heat until crisp. Transfer it to a wide mixing bowl. 


Add 1 cup rava and roast on medium heat stirring continuously for 5 for 7 minutes. After 5 minutes, you will get a nice aroma. Turn off the heat. Keep it aside and allow them to cool down. 



In the meantime, add 1.5 cups and cardamom seeds to a wide mixer jar. Grind it to a fine powder. 


Transfer the powdered sugar to the wide mixing bowl and mix well with the cashew and raisins. 


Now add the roasted rava in the mixer jar and grind it well. The rava should be slightly coarse. 


Transfer the powdered rava to the sugar mixture and combine well. 

Again heat 1/4 cup ghee in the kadai. When the ghee has melted completely, turn off the heat and add it to the mixing bowl little by little. Mix everything together with a ladle.  


When the mixture is slightly hot, take small portions of this to your palm and roll it tightly to bind it. You have to roll each rava ladoo for a few seconds. If the mixture is not easy to bind, melt the remaining 1/4 cup ghee and start making the ladoos. If there is not enough ghee in the mixture, then ladoos may break.
