Avarakkai Poriyal - Broad Beans Stir Fry

Avarakkai poriyal is a quick side dish for your lunch. This poriyal recipe is also prepared with the coconut cumin masala and cooked toor dal as we do for beans carrot poriyal and keerai poriyal dishes. The chopped avarakkais are cooked in a separate vessel and then mixed with the toor dal and coconut mixture. Finally, they are tossed in a pan for a few minutes. This goes well with sambar, rasam, lemon rice and puli illa kuzhambu. Cooking the vegetables in a separate vessel is the secret to get a colourful look in the dish. If you do not prefer you can add it after tempering and sprinkle a handful of water and cook for a few minutes. Vazhaipoo Poriyal - Banana Blossom Stir Fry

Banana blossom or Vazhaipoo poriyal is a healthy side dish for your lunch.  This poriyal also combines the delicious coconut paste and cooked toor dal. The shelf life of Banana blossom is 2 or 3 days, so try to cook it before turning black. You will notice the colour change begins inside the flowers. After removing the thick stick and the glossy petal arrange them equally and chop it finely. After chopping the flowers, quickly put it in a buttermilk to avoid the discoloration. Every day we prepare two varieties of vegetable side dishes for our lunch. Among those two varieties there must be a poriyal dish and the other one is kootu, aviyal or varuval. Varieties of poriyal  dishes are countless with our seasonal vegetables. As I said in my poriyal or thuvaram dishes, we add the ground coconut mixture prepared with coconut, small onions, garlic cloves and red chilly or green chilly. This unique coconut paste is often used in our poriyal or thuvaram dishes. Some prefer to add grated coconut or desiccated coconut powder for poriyal dishes. I actually don't like poriyal dishes made without any flavours. For me, poriyal must have a mix of flavours with perfect textures. We usually precook the vegetables in a vessel (except for keerai poriyal) and then we saute it with the tempering ingredients and finished with our coconut mixture.
