Amla (Gooseberry) Rice | Nellikai Sadham - Easy & Healthy lunch box recipe

Nellikai Sadham - a healthy rice for your lunch box with simple cooking methods. Once again thanks to my Karthi Uncle who taught me the Aloo Gobi recipe prepared this healthy rice. The way we prepare for lemon rice and mango rice applies to this Amla(Nellikai) rice also. In addition, we want to grind the amlas in a mixer jar without any water and then we have to saute it with our classic tempering ingredients. Ponni raw rice is much preferred when preparing these type of rice varieties, but if you are looking for a healthier choice you may replace it with cooked millets.

Raw Mango Rice | Mangai Sadham

Raw mango rice is a tangy, spicy rice made with grated mangoes and flavoured with classic spices. Perfect for lunch boxes and also for your travel foods. Just a handful of grated mangoes and other tempering ingredients are required to make this yummy rice.  Raw mango rice is same as the lemon rice except the mangoes are sauted in the oil before adding the rice. This rice also includes peanuts, curry leaves, red chillies and other tempering ingredients as we add in for the lemon rice. Sauteing the grated mangoes in the gingely oil is one of the main step in this dish and it can give you the lingering taste. Lemon rice | Elumichai sadham

A lemon rice is a perfect lunch box dish. It is really a pleasure to prepare rice varieties and to taste and pack it in the lunch boxes. Moreover, lemon rice is one of the easiest rice to prepare for your busy weekdays. Let us see some important tips for perfect lemon rice. 1. For perfect lemon rice always choose a juiciest lemon. If you are using older lemon, then it will have less juice and won't taste good for this rice. 2. Whether you cook the rice in a pressure cooker or in a vessel, the rice should not be sticking to each other. As I mentioned in my other posts, ponni raw rice tastes good for these kind of rice varieties. 3. Do not add too much of the  ingredients for tempering. It will be difficult while eating. Puliyodarai - Tamarind rice

Puliyodarai/Tamarind rice is an authentic rice dish in Tamil Nadu. The cooked rice mixed with the tangy and spicy tamarind paste prepared with the classic ingredients. Each and every ingredient in the pulikachal (tamarind mix) adds flavour to this rice. If you miss any one ingredient you will miss the perfect taste also. Nobody can say no to this classic and evergreen puliyodarai. To reach the ultimate perfection you must follow each and every step carefully.  There are many ready- made rice mixes are available for puliyodarai but preparing your own pulikachal for this puliyodarai is interesting and also gives you a unique taste. Coconut rice - Thengai Sadham

Coconut rice - Thengai Sadham Coconut rice - this is one of my favourite lunch box dish. My mom frequently prepares this delicious coconut rice for our lunch box. This rice can be easily prepared within 15 minutes without any grinding and chopping work. For this rice you can use any rice of your choice. I prefer ponni raw rice or basmati rice, which gives you the perfect texture. My mom adds finely chopped gingers, finely chopped green chillies and little black pepper powder for this rice. You have to add all the flavours in a minimal level. Then one more thing I want to say is try to use fresh grated coconuts for the natural sweetness in the rice. Please avoid refrigerated coconuts or coconut powder. The addition of cashew nuts and peanuts is optional. The perfect side dish for coconut rice are plantain fry, potato fry and chips.
