Potato Bonda - Aloo Bonda - Quick Evening Snack

Potato bonda - a tasty snack with potatoes which are readily available in most of the tea shops around 4pm. The batter prepared with besan flour is filled with our classic potato masala. Now we will see how to prepare the potato stuffing for the bondas.Usually for stuffing dishes I prefer potatoes with brown skins, which will be easy to mash and holds the shape perfectly. The potatoes with white skins, take more time to cook and it won't give perfect texture for the stuffing. Always choose potatoes by same size for consistent cooking. Potato Fry - Urulaikizhangu Poriyal

A classic potato poriyal served for lemon rice or tamarind rice or rasam makes a delicious and unforgettable lunch experience for many of us. This potato poriyal is so easy to make but it is not quick. The potatoes must be cooked in pressure cooker and then roasted for a minimum of 20 minutes. The general rule for a perfect potato poriyal is that the potatoes should not be overcooked. If the potatoes are overcooked, then the poriyal turns mushy. Using a hard iron pan or indolium aluminium kadai is the best way to cook perfect potato poriyal. Depending on the thickness of the potatoes, roasting them at medium heat should require a cooking time between 15 to 20 minutes. I always prefer to cook these types  of dishes on medium heat, which helps to cook crisper on the outside of the potatoes. Aloo gobi (Potato Cauliflower sabji)

Aloo gobi (Potato Cauliflower) is a healthy and filling sabji with minimal flavours and ingredients. A great side dish for roti, pulav and nann which can be easily prepared within 15 minutes. My uncle ( mother's brother) taught me this aloo gobi recipe. During my school days he taught me to prepare perfect rotis. Even now in our family, he is the master in preparing rotis. Not only in cooking he is having so many talents like painting, drawing, writing poems and stories. He started his career in Delhi so he was familiar with different varieties of sabjis, pulavs and rotis. One day he invited us for a dinner. For dinner, He prepared this Aloo gobi, roti and veg pulav within 30 minutes. He made this aloo gobi within 10 minutes and he served it with soft rotis, veg pulav and a bowl of veg salad. He had actually used simple, everyday, basic ingredients  to prepare this tasty aloo gobi.  

Potato masala for poori

Potato masala - the ultimate side dish for poori . A simple side dish for poori with mild flavours and fantastic taste. In TamilNadu, it is popularly called as poorikizhangu. It is usually prepared with onions, green chillies, ginger and potatoes. We can also add tomatoes, green peas or carrots, but the technique remains the same. The classic poori kizhangu recipe remains the same for many years.  For perfect potato masala the potatoes must be cooked well and then mashed well. You have to slice the onions thinly so that the onions get cooked easily and blended well with the potatoes. The addition of besan flour or fried gram flour for the masala is optional. If you want a thick masala you can add a tbsp of besan flour or fried gram flour in the final stage. These are the important tips to follow for this easy potato masala. Capsicum potato masala

Capsicum(Bell pepper) potato masala (Dry side dish) - simple, quick and tasty side dish within 15 minutes. All you need for this masala is a handful of sliced capsicums and potatoes. The other ingredients are basic ingredients such as turmeric powder, sambar powder, cumin and little tamarind juice. There is no need for any soaking or grinding or pressure cooking. Sometimes you can prepare a tastiest  dish in a matter of minutes. This capsicum potato masala is one among them. You can serve this masala for chapathi, jeera rice, coconut rice, lemon rice and curd rice too. I frequently prepare this easy and quick masala for lunch. This masala tastes so good if you serve right after you prepare it, because the crunchiness in the capsicums will be lost if you prepare in advance. Potato Gulkand (Halwa) - Urulaikizhangu Gulkand

A simple dessert recipe for you to cook a great dessert for your family and friends. Potato Gulkand is a traditional dessert in Tirunelveli. It is often prepared for special occasions and also for festivals. I learnt this recipe from my mom. She often prepares this halwa for diwali and for family get togethers. This halwa consists of potatoes, coconut gratings and sugar, flavoured with cardamom powder. Grated coconuts mixed in the halwa give each scoop a crunch. This potato Gulkand requires some little preparation work. First the peeled and cut potatoes are pressure cooked. While they are cooking we can grate the coconut for the halwa. Potato puttu podimas - Urulaikizhangu Puttu - Easy and quick side dish for sambar, rasam and pulikuzhambu

Potato puttu - the perfect side dish for sambar, rasam and rice varieties. This is similar to vazhaikkai puttu recipe and the only difference is the potatoes are gently mashed instead of grating. This potato puttu is very simple to prepare, so flavourful in each and every bite. Everyone has a favourite potato recipes such as potato fries, mashed potatoes and countless recipes are there based on this friendly vegetable. For me and my husband this potato puttu is an all time favourite side dish for lunch. The main thing you have to follow while preparing this puttu the potatoes should not be overcooked or undercooked.
