Rava kesari is a well known dessert which can be easily prepared within 20 minutes. As compared to other desserts rava kesari is easy to learn and easy to make, especially for beginners. My Uncle (Periyappa) is an expert on preparing this rava kesari. He shared his useful tips and techniques with me for the perfect consistency. He said that we have to roast the rava well in ghee and then the rava must be cooked well in the water (for 1 cup rava, 3 cups water). He always prefers any dessert with sharp sweetness, so he usually add 3 cups sugar for 1 cup rava. And finally the other important tip for the recipe success is the ghee. Ingredients
- 1 cup (200g) rava
- 3 cups water
- 2.5 cups sugar
- 5 to 7 tbsp ghee
- 4 cardamom
- 10 cashew nuts
- a drop food colour
Cooking Directions
1. Heat a heavy bottomed kadai or non stick kadai and add 1 tbsp ghee. Fry the broken cashew nuts till golden brown and add the rava. Roast them well for a few minutes on a low flame. Then transfer them to a plate. Crush the cardamom.
2. In the same kadai, add 3 cups of water and the food colour. Allow them to boil. When it starts boiling, reduce the flame and slowly add in the roasted rava. Stir them continuously with the ladle to avoid lumps.
3. When the rava has cooked completely, add the sugar. Now add some ghee and stir them well.
4. Add the crushed cardamom and the cashew nuts. .
5. Swril ghee around the kesari. Cook and stirring often, for about 7 to 10 minutes until thickened.
