Kaju katli (Cashew nut Fudge) - a delicious sweet made within 15 minutes. For this kaju katli you just need 3 ingredients that you already have in your kitchen. They are the fresh whole cashew nuts, sugar and a tbsp of ghee. And the best part is the cooking method is very simple. For this sweet I recommend to prepare with the whole cashew nuts for the texture and the flavour. When grinding the cashew nuts, it is very important not to over grind it.
As the grinding exceeds, the natural fat in the nuts start to release and it will change the texture of the sweet. The 2nd most important thing in this sweet is the sugar syrup consistency. You should add the cashew nuts powder when you get the one string consistency. After adding the cashew nuts powder, it will take only 3 minutes to complete the process. Do not do other things when preparing this sweet, focus entirely on the katlis and definitely you will get an amazing result.

Kaju katli - a delicious sweet made within 15 minutes. For this kaju katli you just need 3 ingredients that you already have in your kitchen.

Measuring Cup : 1 cup - 200 grams
Ingredients
1 cup whole cashew nuts
1/2 cup sugar
1/4 cup water
1 tbsp ghee
Cooking Directions
- Take a big mixer jar and add the cashew nuts. Grind the cashew nuts. Scrape the sides and again grind it.
- Take a wide, non stick kadai and add the sugar and water. Keep on low flame.
- When the sugar completely dissolves and it starts reaching one string consistency, add the cashew nuts powder and a drop of ghee.
- Stir it continuously until the cashew mixture thickens and starts to leave the sides of the kadai.
- Now transfer the cashew paste to the greased plate. Spread the paste evenly and with a help of a greased spoon level the dough equally.
- After 5 minutes, gently cut them with a greased knife. After 10 minutes, take each katlis carefully and store them in an airtight container.

Measure and keep all the ingredients ready for the katlis. Grease a plate or tray with little ghee.Take a big mixer jar and add the cashew nuts. Grind the cashew nuts.(no need to add any water or milk). Scrape the sides and again grind it.
Take a wide non stick kadai and add the sugar and water. Keep on low flame.
Stir it continuously until the cashew mixture thickens and starts to leave the sides of the kadai.
It will take around 3 to 4 minutes to reach this stage.
After 5 minutes, gently cut them with a greased knife.
After 10 minutes, take each katlis carefully and store them in an airtight container.
Kaju Katli is ready to serve. For 1 cup Cashew nuts you will get around 32 to 35 katlis. You can also knead the cashew nut mixture like chapathi dough and roll it into thin chapathi and cut them into katlis.
