Beetroot Kurma

Beetroot kurma - thick creamy pink colour gravy for chapathi, poori and dosa. This kurma would surely impress your kids with its beautiful colour. I like to prepare kurma with different combinations. Based on the coconut paste, this kurma is also prepared, with easy cooking methods. Usually we add cashew nuts or fried grams in the coconut paste and then the masala paste is prepared. But for this kurma, I add the cashew nut paste at the end. The grated coconuts are ground along with tomatoes, ginger and a few spices and sauted in the oil. Then the cooked beetroots are added and then our basic ingredients like chilly powder, garam masala powder are added to the kurma. Paneer Kurma

Paneer Kurma is a delicious kurma made with paneer cubes in a creamy coconut gravy. This Kurma is very easier to prepare for your dinner. After preparing this Kurma, it will be your family's favourite. Most of us are familiar with paneer. They are an easy to cook ingredient in gravies so there is no pressure cooking or soaking work for this kurma. Unlike most kurmas, some grinding work is required for this kurma with classic spices, tomatoes, onions and coconut. In this kurma I have sprinkled few kasuri methi leaves to enhance the flavour. This kurma will pair well with chapathi, dosa, parotta and jeera rice. The paneer cubes combined with the coconut gravy gives a tasty side dish for your dinner. Simple Vegetable Kurma

This is a simple vegetable kurma with a combination of vegetables made with coconut paste and little garam masala powder for the flavours. There are no other extra spices or some other special ingredients like fresh cream, cashew nuts or poppy seeds. Dinner plays an important role for a good sleep. Sometimes it is uncomfortable for us to have a kurma with lots of flavours for dinner.This kurma works well because there is no additional flavours and five different vegetables with fiber which helps in digestion. This kurma is also suitable for elderly people and people who have heartburns and also for your kids. Make sure to include carbohydrates (dosa, chapathi or idiyappam) along with this vegetable kurma to have a balancedv dinner. Mushroom Kurma

This is a simple kurma with button mushrooms in a creamy coconut gravy which can be easily done within 20 minutes.This kurma goes very well with dosa, chapathi and poori. You can customize this kurma according to your taste preference. The fennel seeds, cloves and cinnamon are a must and you can also include other spices like bay leaf, star aniseed or cardamom depending on your cuisine. If you want to add any extra vegetables, you can add cooked green peas or sweet corn kernels. The coconut paste blends beautifully together with the mushrooms. You may adjust the coconuts and fried grams. Once the kurma is complete, let the kurma to cool for 15 to 20 minutes and then serve. The spices will release the flavours into the mushrooms once the kurma has cool down to room temperature. Cauliflower Kurma

Cauliflower Kurma  Kurmas usually involve the whole spices, onions, tomatoes and the coconut paste. This Cauliflower Kurma also includes the same ingredients, but lots of chopped small onions and chopped garlics which add a unique taste and flavor in this dish. This Kurma pairs well with poori, roti, parotta, aapam and dosas. It even tastes good for ghee rice and vegetable pulav. This kurma is one of my all time favourite dish. The preparation work and the ingredient lists are very simple. The only thing that takes time in this dish is chopping the onions and garlics finely. If you do not have small onions, replace it with the regular onions. For this Kurma choose cauliflowers which are tightly packed. The thickness of the kurma is also similar to many kurmas but the taste of the cauliflower kurma is more unique than many other kurmas. Red soyabeans and Mushroom Kurma

A protein rich dish with a creamy coconut gravy, this kurma is a perfect accompaniment for dosa, chapathi or pooris. The flavours of soybeans and mushrooms complement each other perfectly. For this recipe, I used fresh soya beans, but you can use the dried soy beans also. If you are using dried soya beans soak it overnight and pressure cook for 5 whistles. This method of mushroom kurma with red soya beans is very easy to make with little preparation work. I always prefer medium consistency kurma which is easy to pour over chapathi, dosa, pulav and poori. This kurma has very few spices in it and gets thick with fried grams. Addition of fried grams and milk skin is optional. You can replace it with cashew nuts and  thick cold milk. Make sure to use fresh mushrooms and fresh coconuts for the kurma. Paneer Capsicum Kurma

Capsicum is one of my favourite combination with paneer. Capsicums have very low calories and numerous nutrients which help boost your immunity system. Paneer is also a favourite for all age groups and it is a high protein food. It is quite easy to make at home. I always prepare homemade paneer. This is a coconut based gravy with paneer and capsicum. This is a simple home style kurma and there is no cashew paste or fresh cream. This kurma goes well with chapathi, ghee rice and dosas. The consistency is a little thicker than the other kurma. Let's see how to prepare this kurma with step by step photos. 

Soya chunks and green peas kurma

Soya chunks are rich in protein and are considered to be a vegetarian subsitute for meat. Making kurma with soyachunks was very tasty and excited me a lot. This masala can be served with rotis, parathas and jeera rice.

Vegetable Kurma - Hotel Style Vegetable Kurma (Carrots, beans, potatoes and green peas in rich coconut paste)

Vegetable kurma  for chapathi restaurant style Vegetable kurma is a family favourite dish for everybody. This vegetable kurma and chapathi is our weekend special during our childhood days.  The classic combination of carrots, peas, beans and potatoes is enriched with coconut masala paste and other spices. Any type of kurmas cooked in medium flame allows the ingredients to give maximum richness.  Make sure to cut the vegetables in equal size so that you don't have some vegetables overcooked and others undercooked. Do not cook the vegetables for more than 2 whistles because the beans and green peas will turn to grayish colour when overcooked.  For a perfect kurma, taste as you cook and make sure there is a nice balance of flavours and you  will be able to determine any adjustments needed for it.  After finishing the kurma do not hurry up to serve immediately because you can enjoy the flavours once the kurma is at a room temperature.
