Rava ladoo using condensed milk
Rava ladoo is a quick and easy sweet made with condensed milk, fresh coconuts, fine rava and ghee. I learnt this recipe from my Chithi(aunt). In this recipe I have added both sugar and condensed milk for sweetness. To get the best texture and taste, you have to roast the rava very well. Try to use fresh coconuts for this ladoo which gives you a nice flavour. You can whip the coconut gratings in a jar before frying

Rava ladoo using condensed milk with step by step photos.

Yield : 35 - 40 ladoos
Ingredients
- 2 cups (400 grams) fine rava
- 1 cup fresh grated coconut
- 1/2 tin or 200g milkmaid
- 1 cup sugar
- 8 to 10 tbsp ghee
- 15 broken cashew nuts
- 10 raisins
- 2 tsp cardamom powder
Cooking Directions
1. Heat 2 tsp of ghee in a heavy bottomed pan or non stick kadai and add the broken cashew nuts and raisins. Stir often and roast on a low flame till the cashew nuts and raisins change its colour. Then transfer it to a plate.
2. In the same kadai, add 5 to 7 tbsp of ghee and add the rava to it. Roast the rava on a low flame till the rava becomes fragrant.
3. It will take around 7 to 9 minutes. You have to roast the rava well. No need to brown them. Transfer it to a plate.
4. Next add little ghee and roast the coconuts well. Roast them till it turns light golden brown.
5. Then add 1 cup sugar and 1/4 cup of water. Boil till you get one string consistency.
6. When you get the one string consistency, add the roasted rava, roasted coconut, cardamom powder, roasted cashew nuts and raisins.
7. Stir it continuously to avoid lumps. Then add the condensed milk slowly and stir it continuously.
8. Reduce the flame to low and mix everything well until it leaves the sides of the kadai.
9. Transfer them to a wide bowl. When it is warm enough to handle, take small portions of it and make laddus.
