Rava Ladoo - Easy Rava Ladoo Recipe - Easy Diwali Sweets

Today we are going to see an easy rava ladoo recipe that's perfect for Diwali, Krishna Jeyanthi or for any family occasions. This recipe can be easily doubled if you are preparing in a large quantity. Good news, no condensed milk, no sugar consistency syrup and no milk are needed for this rava ladoo. There are many easy methods for rava ladoo but this is the traditional method my grandmother used to prepare which stays good for more than 2 weeks.

Simply roast the rava and powder the rava and sugar separately in a mixer jar. And then combine the powdered rava, sugar along with roasted cashews and cardamom powder. Mix the dry ingredients well and then add melted ghee little by little. When it's warm enough to handle, prepare ladoos. Easy sweet recipe within 30 minutes with simple methods.

Tips to make perfect Rava Ladoo

  1. To make soft rava ladoos, do not roast the rava for a long time. Roast until you get a nice aroma.
  2. For this rava ladoo recipe, I suggest using fine rava. Please do not use the rava which are larger in size. Since we are going to powder them in a mixer jar, I recommend using fine rava which will be easy to shape the ladoos with perfect texture.
  3. You must cool the roasted rava for 15 minutes and then powder it in a mixer jar. Do not powder them like flour. I always prefer semi fine texture.
  4. For binding the ladoos we use ghee in this recipe. I do not prefer milk for binding as they do not have a longer shelf life.

Category : Sweets

Author : Muthulakshmi Madahavakrishnan

Ingredients

  • 1 cup rava (fine rava)
  • 1.5 cups sugar
  • 1/2 cup ghee
  • 10 to 12 broken cashew nuts
  • few raisins
  • 1/2 tsp cardamom powder

Cooking Directions

Heat a heavy bottomed kadai and add 2 tbsp ghee. Add the broken cashew nuts and raisins and roast well on medium heat until crisp. Transfer it to a wide mixing bowl.

Add 1 cup rava and roast on medium heat stirring continuously for 5 for 7 minutes. After 5 minutes, you will get a nice aroma. Turn off the heat. Keep it aside and allow them to cool down.

In the meantime, add 1.5 cups and cardamom seeds to a wide mixer jar. Grind it to a fine powder.

Transfer the powdered sugar to the wide mixing bowl and mix well with the cashew and raisins.

Now add the roasted rava in the mixer jar and grind it well. The rava should be slightly coarse.

Transfer the powdered rava to the sugar mixture and combine well.

Again heat 1/4 cup ghee in the kadai. When the ghee has melted completely, turn off the heat and add it to the mixing bowl little by little. Mix everything together with a ladle.

When the mixture is slightly hot, take small portions of this to your palm and roll it tightly to bind it. You have to roll each rava ladoo for a few seconds. If the mixture is not easy to bind, melt the remaining 1/4 cup ghee and start making the ladoos. If there is not enough ghee in the mixture, then ladoos may break.

Quick Paneer Masala - 15 minute Paneer Gravy - Easy Paneer Masala

Quick Paneer Masala - this homemade restaurant style paneer masala is one of my most frequently made gravy recipes. It's perfect with chapathi, poori, nann and also for pulao varieties. Fresh tomatoes help to  make the best gravy, especially when you use red ripe tomatoes. What makes this quick paneer masala easy to make and why it calls for 15 minute gravy is because instead of pureeing the tomatoes, it's made with ground tomato paste. For paneer butter masala, we blanch the tomatoes and then made into puree. But I want to prepare a quick gravy with simple process. During the summer season, I like to prepare gravy and sambar with a shortcut. This quick paneer masala is one of the best 15 minute gravy recipes for beginners and also for busy mothers. Seppankizhangu Poriyal - Taro Root (Arbi) Fry

Seppankizhangu Poriyal  - this poriyal is prepared with taro root, chilly powder, small onions cumin garlic paste and perfectly roasted in an iron kadai. The best cooking method for this taro root poriyal is to cook the taro roots in an open vessel for 10 minutes on medium heat with a good amount of water. No one likes a mushy taro root, so just keep an eye on it and check them for doneness by inserting a knife. If you cook taro roots in a pressure cooker, it will be too soft and turns mushy. For these types of roast dishes, low heat and long cooking times are important for its texture. The small onions cumin garlic paste, adds flavour to the taro roots. Roasting the taro roots in an iron kadai creates an excellent flavour and texture.   Similar recipes Vazhaikkai Thuvattal -  Raw Banana (Plantain) Stir Fry   Mithi Paavakai Poriyal - Baby Bitter Gourd Stir Fry  Vazhaikkai Poriyal - Raw Banana (Plantain) Poriyal  Brinjal (Egg Plant) Stir Fry -...

Wheat Rava Kichadi With Vegetables - Samba Godhuma Rava Kichadi - Healthy Breakfast

A healthy diabetic friendly kichadi recipe made with wheat rava. You can start your breakfast with a cup of this healthy kichadi as it includes carrot, green peas and beans which blend together beautifully with wheat rava. A handful of fresh green peas gives a slightly sweet taste for the kichadi.  There are two main varieties of wheat rava - medium coarse and fine coarse. Fine coarse wheat rava is my favourite for kichadi and upma dishes. Medium coarse wheat rava is perfect for sweet pongal and payasam. Both types require more time to cook when compared to regular white rava. Fine coarse wheat rava doesn't need to be roasted for this kichadi. To cook 1 cup fine coarse wheat rava you will need 3 cups of water. After preparing the kichadi you should let it stand for 15 minutes, covered and undisturbed for a perfect fluffy texture. And once you find how to cook wheat rava perfectly, you will be making it regularly for your breakfast.  Check out my other tiffin recipes here Idli ...

Samba Aval Sarkkarai Pongal - Red Rice Flakes (Poha) Sweet Pongal

Samba aval sweet pongal - easy to make sweet pongal with red thick samba aval, jaggery and ghee. We usually make sweet pongal with raw rice and millets. A few months ago, my Grandma prepared this samba aval pongal for kadaisi velli pooja (every Tamil month last Friday is called kadaisi velli). It turned out very well and easy too. We can also make this pongal with white thick aval too. This is the best neivedyam for festivals. This pongal tastes good with thick aval rather than the thin aval. So make sure to use either samba thick aval or white thick aval. The colour of the sweet pongal depends upon the type of aval and jaggery you use. Roasting the aval in ghee will give a unique flavour for the pongal. Since we are using thick samba aval, make sure to cook the aval nicely and then add the jaggery syrup to it. The making process of this aval sweet pongal is quite similar to aval with jaggery, but they tastes different. Although the process looks quite simple, there are some simple mis...
