Mudakathan Keerai Dosa | Balloon Vine leaves Dosa

Today we are going to see a beautiful green colour dosa, which is prepared with a healthy mudakathan keerai (balloon vine leaves). This mudakathan keerai (balloon vine leaves) has so much of health benefits. The health benefits of mudakathan keerai (balloon vine leaves) include it relieves joint pains, treats cold and cough, helps in treating diarrhoea etc. Try to include this medicinal herb monthly twice or thrice in your regular diet. The best way to include this keerai is to prepare this dosa. There is no bitterness in the dosa and it tastes so good.

Tomato Dosa

Tomato Dosa is a simple and tasty tiffin for breakfast or dinner. Rice, urid dal and tomatoes are the main ingredients for this dosa. Onions, curry leaves and other extra flavours can be added as you wish. There is no need for fermentation process for this dosa. You can prepare right after you grind the batter.

Rava Dosa

Rava dosa is the common tiffin dish seen in most of the South Indian restaurants. There are various varieties of rava dosas like onion rava dosa, masala rava dosa, ghee rava dosa etc.. but the batter for all these varieties are same. You can create your own rava dosas with your imagination. The basic ingredients needed for rava dosa are rava, maida or atta flour and rice flour. For flavours crushed or whole black peppercorns, cumins, curry leaves are added. If the flours are properly mixed with the correct ratio of water then it will be a lot easier to prepare restaurant style rava dosa for your family. You don’t need to buy any readymade mix for rava dosa. I have experimented this rava dosa with many practices and here I will share all of the techniques to prepare perfect rava dosas.

Millets and Toor dal dosa

Millets toor dal dosas are simple dosas made with millets, toor dal, red chillies and a small piece of tamarind. It is an easy recipe and can be made with any millets as you wish. In this dish I have used proso kodo millets. This dosa makes a great dinner without any much effort. The secret to this crispy dosas is in the grinding the batter in correct consistency. After grinding the batter, I have added finely chopped onions and curry leaves. These dosas require no fermenting, so simply add the onions and any other chopped vegetables or greens and start preparing the crispy dosas. You can serve this dosa with any chutney or sambar. The combination of millets with toor dal is perfect for dosas plus this recipe is easy too.

Black Urid Dal Dosa - Mulu Ulundhu Dosa - Tirunelveli Special

Black urid dal dosa also called as mulu ulundhu dosa in Tirunelveli. This is a famous breakfast dish in Tirunelveli. This is an easy and healthy dosa with rice, black urid dal and fenugreek. We often prepare this dosa for weekend breakfast or dinner. The addition of black urid dal with its skin is what it makes it so special and unique.  Black urid dal contains a lot of nutritional value. In most of our food items we include black urid dal rather than the white variety. This black urid dal dosa is also super easy to make with simple two step process. I use split black gram dal in this recipe, but you may also use the whole black gram dal. Many people have a doubt that if black split  grams are ground along with the skin then how it will taste. It is very tasty if they are ground and fermented properly. Pepper dosa - Milagu Adai - Easy & Healthy Tiffin

Pepper dosa - easy and healthy breakfast dish. In South India major types of dosa are prepared using  rice and urid dal. This pepper dosa is also prepared with rice and urid dal but instead of white urid dal i have used black split urid dal.The dosa is flavoured with black pepper powder and to add some extra taste I have added finely chopped onions, fresh grated coconuts, curry leaves and cooked with coconut oil. The consistency of the batter should be thin like rava dosa batter. After grinding the batter you can immediately prepare the dosa and no need to ferment it. The black urid dal and black pepper powder are the main ingredients which give a unique taste for this dosa. The perfect accompaniment for this dosa are coconut chutney or curry leaves chutney.
