Beetroot Kootu - Beetroot with Moong Dal and Coconut - Kootu Recipes

Beetroot kootu is one of my favourite dishes with beetroots. It goes well with rasam and puli kuzhambu. If you are planning to cook an easy dish with beetroots, this is going to be your choice because it requires very less cooking methods when compared to other beetroot dishes. Although beetroot stir fry is an easy dish to cook, but the grating works is a tough process for me. In all our kootu recipes we always include dal and coconut. For this beetroot kootu also we add  moong dal and grounded coconut masala and it is a protein and fiber packed kootu. I often don't prefer to cook the kootu in a pressure cooker but for beetroot kootu I prefer to cook in a pressure cooker as it gets cooked easily and perfectly. As with most of our kootu or poriyal dishes we use ground coconut in a good amount which gives an amazing taste for each and every dishes. Beetroot Rasam

A delicious rasam made with beetroots, tomatoes, garlic and other classic spices. This beetroot rasam makes an excellent meal for kids. I made this rasam by two ways the one which made with the grated beetroots and the other one with pre cooked beetroots. Both of them were tasted exactly the same. But in the first method, the pink colour was less when compared to the other method. Today we are going to see the rasam with the cooked beets. The beetroots are pressure cooked and then grounded to a smooth paste. Then as we do for the regular rasam we have to saute the crushed garlic pepper and cumin and the grounded beetroot paste are added to it.  What makes this rasam an extra special is the pink colour with a sweet taste. So took some extra time to cook and grind the beets. If we grind them without cooking, there is a raw smell of the beetroots in the rasam. Beetroot Biryani

Beetroot biryani another colourful dish with beetroot. Today we are going to see how to prepare biryani using beetroot with simple cooking methods. Simple and healthy biryani for your kids lunch box within 30 minutes. Usually I prepare beetroot stir fry, beetroot poori and beetroot jam for my son. Oneday he told me to prepare biryani with beetroots. Almost everybody in our family like beetroots. So definitely this rice will be  your family favourite. Every biryani starts with the classic spices, ginger garlic paste, onions, tomatoes, mint leaves, coriander leaves and ends with the rice. For cooking the rice you can either add water or coconut milk. In addition to these basic ingredients you can include any of your favourite common vegetables like carrot, green peas, cauliflower, beetroot or mushrooms or soya chunks. Beetroot Kurma

Beetroot kurma - thick creamy pink colour gravy for chapathi, poori and dosa. This kurma would surely impress your kids with its beautiful colour. I like to prepare kurma with different combinations. Based on the coconut paste, this kurma is also prepared, with easy cooking methods. Usually we add cashew nuts or fried grams in the coconut paste and then the masala paste is prepared. But for this kurma, I add the cashew nut paste at the end. The grated coconuts are ground along with tomatoes, ginger and a few spices and sauted in the oil. Then the cooked beetroots are added and then our basic ingredients like chilly powder, garam masala powder are added to the kurma. Beetroot stir fry/puttu

Beetroot puttu is a quick side dish for your lunch. In my blog, I have already posted plantain puttu and potato puttu which can be prepared easily without much work. This beetroot puttu is also similar and there is no need for precooking as done for plantain and potatoes. Anyone can prepare this easy dish for your family. For this dish also I suggest to use fresh beetroots which can be easily grated and gets cooked within few minutes. If you use 4 days old refrigerated beetroots it is difficult for grating and the taste is also not good. This beetroot puttu is a perfect side dish for sambar , rasam and pulikuzhambu . The leftover puttu can be used to prepare beetroot utthapam. Now let's see how to prepare this beetroot puttu.

Beetroot Jam

This beetroot jam is a common sweet in Tirunelveli. It is served on plantain leaves at lunch meals for special occasions. Beetroot has very good flavour and texture when its cooked and its natural sweetness makes it perfect for jams. My periyappa (uncle) taught me this tasty jam. The cooking time is very less and you can prepare this jam within 30 minutes. Kids always enjoy colourful sweets, so surprise your kids with this beetroot jam when they returned from the school. Beetroot and green peas poriyal

Usually in many restaurants they serve this beetroot green peas poriyal as a side dish for sambar combo. This is a quick and healthy side dish for your lunch. You can also use black eyed peas instead of green peas. You have to add  lots of chopped onions and coconut. This dish is colourful with the dark green peas, red beets and white coconut gratings.
