Today we are going to enjoy another refreshing and colourful salad recipe. This is one of my all-time favourite salads – a simple yet flavourful Boiled Peanut Salad. Growing up, the aroma of freshly boiled street-style peanuts wrapped in newspaper pottalam still brings back warm childhood memories. Though those days are gone, this bowl of goodness always takes me back.


Boiled peanuts are not only tasty but also packed with nutrition. They are rich in protein, fibre and good fats, which help keep you energetic and full for a long time. Peanuts also support heart health, improve digestion and provide essential vitamins and antioxidants. Including boiled peanuts in your diet is one of the easiest ways to add plant-based protein to your meals.

To get perfectly soft-boiled peanuts, the cooking process is very important. Raw peanuts take longer to cook, so make sure to soak them for at least 8 hours. After soaking, pressure cook the peanuts with enough water and salt until they turn soft and tender. Once cooked, you can toss them with fresh vegetables and mild seasonings to prepare a wholesome salad that suits your taste buds perfectly.

Boiled Peanut Salad Recipe Details 

Ingredients

  • Raw peanuts – 1 cup
  • Finely chopped onion – 1/2 cup
  • Finely chopped cucumber – 1/2 cup
  • Finely chopped tomato – 1/2 cup
  • Green chilli – 1
  • Grated carrot – 1/2 cup
  • Pepper powder – 1/4 teaspoon
  • Chaat masala powder – 1/4 teaspoon
  • Red chilli powder – 1/8 teaspoon
  • Lemon juice – 1 tablespoon
  • Finely chopped coriander leaves – 1 tablespoon
  • Salt – as needed

Method

1. Soaking the Peanuts

Wash the raw peanuts well and soak them in enough water for 8 hours.


2. Pressure Cooking the Peanuts

After soaking, rinse once again and add the peanuts to a pressure cooker.Add 1 teaspoon salt and 2 cups of water. Cook for 8 whistles or until soft.


3. Draining the Cooked Peanuts

Once the pressure releases naturally, drain the water completely and keep the peanuts aside.


4. Mixing the Salad

In a wide mixing bowl, add the cooked peanuts, grated carrot, chopped onion, chopped tomato, chopped green chilli, chopped cucumber and a little salt. Mix gently.




5. Adding Spices and Seasonings

Add pepper powder, chaat masala, a pinch of red chilli powder, and lemon juice.Finally, add chopped coriander leaves and toss everything well.


Note

Since salt is added while boiling the peanuts, adjust salt carefully while mixing the salad.

Tirunelveli Kootanchoru - Mixed vegetables rice with dals and spices

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. In this dish also we have used coconut small onion paste and good amount of fresh vegetables. We add commonly used vegetables such as raw banana, brinjals, drumsticks, carrots, beans and potatoes. I have learned this recipe from my grandma. She taught me with her some useful tips and techniques about how to cook, when to add the ingredients and how to choose the correct vegetables. Seppankizhangu Poriyal - Taro Root (Arbi) Fry

Seppankizhangu Poriyal  - this poriyal is prepared with taro root, chilly powder, small onions cumin garlic paste and perfectly roasted in an iron kadai. The best cooking method for this taro root poriyal is to cook the taro roots in an open vessel for 10 minutes on medium heat with a good amount of water. No one likes a mushy taro root, so just keep an eye on it and check them for doneness by inserting a knife. If you cook taro roots in a pressure cooker, it will be too soft and turns mushy. For these types of roast dishes, low heat and long cooking times are important for its texture. The small onions cumin garlic paste, adds flavour to the taro roots. White pumpkin(ash gourd) in Tamil it is called as thadiyangai or vellai poosani. White pumpkin is popular in South Indian foods and widely used in kootu, sambar and patchadi. Wheat Rava Kichadi With Vegetables - Samba Godhuma Rava Kichadi - Healthy Breakfast

A healthy diabetic friendly kichadi recipe made with wheat rava. You can start your breakfast with a cup of this healthy kichadi as it includes carrot, green peas and beans which blend together beautifully with wheat rava.
