Black Eyed Cow Peas and Sweet Potato Salad Recipe Details

Ingredients
- 1 cup black eyed cow peas
- 1 sweet potato
- 1/4 cup finely chopped onion
- 1/4 cup chopped tomato
- 1/4 cup grated carrot
- 1/4 tsp red chilli powder
- 1/4 tsp roasted cumin powder
- 1/4 tsp chaat masala powder
- 1 tbsp pomegranate seeds
- 1 tbsp coriander leaves
- Salt to taste
Cooking Directions
- Wash and soak black eyed peas in enough water for 4 to 5 hours. Add it to a pressure cooker and cook for 4 whistles. Allow the pressure to settle down naturally and drain the water completely.
- Wash and peel the sweet potato. Cut them into small cubes and steam the potatoes for 3 to 5 minutes.
- Take a wide mixing bowl and add the cooked black eyed peas, finely chopped onions, chopped tomato, grated carrot, cooked sweet potato, red chilly powder, roasted cumin powder, and required salt. Mix gently.
- Finally, add pomegranate seeds and chopped coriander leaves. Mix well and serve immediately.
- Healthy and Yummy Black Eyed Cow Peas and Pomegranate Salad is ready.
