Ragi flour kozhukkatai(Dumplings)

 Ingredients

  •     1 cup ragi flour ( finger millet flour)
  •     1/2 cup rice flour ( idiyappam or puttu flour)
  •     3/4 cup powdered palm jaggery(karupatti) or jaggery
  •     3/4 cup grated coconut
  •     2 tbsp  sesame seeds
  •     1 tbsp oil

Cooking Directions

1. Take a white cloth and place the ragi flour in the cloth and slowly tie like a bag. Place the bag on the top of the idly plate and steam cook for 10 - 15 minutes.
2. Untie the bag and break the flour without any lumps. Allow it to cool completely.
3. Heat a pan and dry roast the rice flour for 1 minute. Then add it to the ragi flour and mix well.Heat a pan and fry the sesame seeds and coconut until it turns golden brown and add it to the flour.
4. In a mixing bowl add the flours, fried coconut gratings, roasted sesame seeds.
5. Now dissolve the palm jaggery with 1/2 cup of water and bring it to a boil. Then strain the impurities using a strainer.
6. When it completely melts, add it to the mixed flour little by little. Now mix them with a wooden ladle.
7. When it is warm, mix them with your hand evenly and make a smooth dough.
8. Then divide them into equal balls and press them in the centre to make kozhukkattais (Apply some oil in your palms). Place the kozhukkattais in the greased idly plate and steam cook for 10 to 12 minutes.

Delicious, healthy ragi flour kozhukkattai is ready. It will be good for 2 days in room temperature.

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers. In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. In this dish also we have used coconut small onion paste and good amount of fresh vegetables. We add commonly used vegetables such as raw banana, brinjals, drumsticks, carrots, beans and potatoes. Paal Kozhukattai - our family favourite evening dessert. Paal Kozhukattai is an easy dessert made with just 4 ingredients. This paal kozhukattai is made with rice flour and then cooked in the milk. The kozhukattais are then sweetened with sugar and to add some extra flavours grated coconuts and a teaspoon of cardamom powder are added. So good when it's served hot.

Thiribagam is a popular dessert in Tirunelveli. This thiribagam is made from besan flour, cashew powder, badam powder, sugar, milk and ghee.
Edible camphor and saffron are used for adding flavour. This traditional homemade dessert is wrapped up in a piece of butter paper and served.
This sweet has a combination of three major sweets kajukatli, mysurpa and badam halwa. Hence it is called as Thiribagam.

Coconut Burfi - Thengai Mittai

Coconut burfi we call this sweet as thengai mittai. It's our family friendly, sweet. My paternal Grandmother (her name is also Muthulakshmi) prepared these delicious coconut burfi  for us during our childhood days. She was an expert in preparing sweets and prasadams. Whenever she made this coconut burfi she added a pinch of pink colour to it. The  beautiful pink colour attracted us, and the whole burfis were finished within a day or two. All you have to do is to combine the grated coconuts, sugar and ghee in a kadai. You can also grind the coconut without any water in a mixer jar to set a smooth burfi.
