Ingredients
- 300 grams bottle gourd
- 1/4 cup moong dal
- 1 tbsp chana dal
- 1/4 cup onions, finely chopped
- 1 tomato
- 1/4 tsp turmeric powder
- 1/2 tsp sambar powder
- 2 red chilli
- 3 small onions
- 1/2 tsp cumin
- 1/4 cup coconut
- few curry leaves
- few coriander leaves
- 1/2 tsp mustard and urid dal
- salt to taste
- 1 tbsp coconut oil
Cooking Directions
Peel the bottle gourd, cut it lengthwise into two halves, gently remove the pulp, and cut it into small cubes.
Rinse both dals three times in water and soak them in enough water for an hour.
Take a pressure cooker and add the chopped onions, chopped tomato, cubed bottle gourd, soaked dals, turmeric powder, sambar powder, and water. Do not add too much water — just enough to immerse all the ingredients. Close the lid and pressure cook for two whistles.
Meanwhile, grind coconut, red chilli, small onions, and cumin coarsely with a little water.
Allow the pressure to settle naturally before opening the cooker. You’ll see a beautiful, perfectly cooked mixture.
Add the required amount of salt, the ground coconut mixture, and a little more water. Mix well and let the kootu boil for 5 minutes on medium heat. Add chopped coriander leaves and turn off the heat.
Heat coconut oil in a frying pan, add mustard seeds and urad dal. Allow them to crackle, then add fresh curry leaves. Pour this tempering over the hot kootu and mix well.
