Method
- Ensure the dried red chillies are completely free from moisture. For best results, sun-dry them for a few hours before roasting.
- Heat a kadai and dry roast the red chillies on low heat. Stir continuously to avoid burning.
- Roast until the chillies become crisp and make a crackling sound when broken.
- Allow them to cool completely.
- Remove and discard all the brown stems.
- Break each chilli into two pieces and separate the seeds from the chilli skin.
- Transfer the chilli skins to a mixer jar and pulse briefly to obtain coarse flakes. Avoid grinding into a fine powder.
- Add the reserved seeds and pulse once or simply mix them with the chilli flakes.
- Store in a clean, dry, airtight container.
