Carrot Puttu - Carrot stir fry with onions and coconuts

This Carrot puttu/stir fry is a quick side dish to pair it with any kuzhambu or rice varieties for your lunch. Whenever I prepare this carrot puttu, I mix it up with lots of chopped onions and fresh grated coconuts. This carrot puttu is both healthy and easy  to make. These carrot puttu is a kind of side dish that you can simply eat it like a salad or you can stuff it for a sandwich and also for a carrot othapam. Always use fresh carrots and fresh coconuts when preparing this dish. Never add any water to cook the carrots as they are very thin and any water during cooking will lose the beautiful orange colour and texture. I prefer small onions for this dish, you can use whatever you want. Finally garnish with a good amount of fresh coconuts.

This Carrot puttu/stir fry is a quick side dish to pair it with any kuzhambu or rice varieties for your lunch.

Ingredients
  • 5 carrots
  • 10 small onions
  • 2 green chillies
  • 1/2 tsp mustard
  • 1/2 tsp urid dal
  • few curry leaves
  • 1/4 cup fresh grated coconuts
  • 1 tsp oil
  • salt to taste
Cooking Directions
  1. Start by peeling the carrots and trim the top.Take a big plate or vessel and place it on a flat surface. Grate the carrots uniformly without any solid pieces. Grate the coconuts without any brown part.
  2. Peel the onions and chop it finely. Chop the green chillies into thin rounds.
  3. Heat oil in a frying pan for about 2 minutes. Add the mustard and urid dal.When urid dal turns golden brown, add the green chillies, curry leaves and onions. Stir and saute them for a few minutes.
  4. When the onions turn golden brown, add the grated carrots. Stir them continuously.
  5. Add the required salt and mix them well. Close it with the lid for 3 minutes. Stir them in-between to prevent from sticking to the pan.
  6. When the grated carrots wilts, add the fresh coconuts. Mix them well and turn off the heat.

When the grated carrots wilts, add the fresh coconuts. Mix them well and turn off the heat.Quickly transfer them to the serving bowl to retain the beautiful orange colour.


Enjoy this healthy, tasty and simple Carrot puttu for your next lunch with any rice varieties or kuzhambu. My favourite combinations for this Carrot puttu are lemon rice and Sambar. After cooking this dish we simply eat this like sundal. Don't forget to a add good amount of fresh coconuts. For these kind of stir fry dish, saute the vegetables with less oil.

Wheat Rava Kichadi With Vegetables - Samba Godhuma Rava Kichadi - Healthy Breakfast

A healthy diabetic friendly kichadi recipe made with wheat rava. You can start your breakfast with a cup of this healthy kichadi as it includes carrot, green peas and beans which blend together beautifully with wheat rava. A handful of fresh green peas gives a slightly sweet taste for the kichadi.  There are two main varieties of wheat rava - medium coarse and fine coarse. Fine coarse wheat rava is my favourite for kichadi and upma dishes. Medium coarse wheat rava is perfect for sweet pongal and payasam. Both types require more time to cook when compared to regular white rava. Fine coarse wheat rava doesn't need to be roasted for this kichadi. Every day we prepare two varieties of vegetable side dishes for our lunch. Among those two varieties there must be a poriyal dish and the other one is kootu, aviyal or varuval. Varieties of poriyal  dishes are countless with our seasonal vegetables. As I said in my poriyal or thuvaram dishes, we add the ground coconut mixture prepared with coconut, small onions, garlic cloves and red chilly or green chilly. Seppankizhangu Poriyal  - this poriyal is prepared with taro root, chilly powder, small onions cumin garlic paste and perfectly roasted in an iron kadai. The best cooking method for this taro root poriyal is to cook the taro roots in an open vessel for 10 minutes on medium heat with a good amount of water. No one likes a mushy taro root, so just keep an eye on it and check them for doneness by inserting a knife. If you cook taro roots in a pressure cooker, it will be too soft and turns mushy. Easy milk sweet - prepared with condensed milk, unsweetned kova, powdered sugar and ghee. You can easily prepare this milk cake within 30 minutes.
