This Carrot puttu/stir fry is a quick side dish to pair it with any kuzhambu or rice varieties for your lunch. Whenever I prepare this carrot puttu, I mix it up with lots of chopped onions and fresh grated coconuts. This carrot puttu is both healthy and easy to make. These carrot puttu is a kind of side dish that you can simply eat it like a salad or you can stuff it for a sandwich and also for a carrot othapam. Always use fresh carrots and fresh coconuts when preparing this dish. Never add any water to cook the carrots as they are very thin and any water during cooking will lose the beautiful orange colour and texture. I prefer small onions for this dish, you can use whatever you want. Finally garnish with a good amount of fresh coconuts.

Ingredients
Wash the carrots and start by peeling the carrots and trim the top.
Take a big plate or vessel and place it in a flat surface. Grate the carrots uniformly without any solid pieces.

Ingredients
- 5 carrots
- 10 small onions
- 2 green chillies
- 1/2 tsp mustard
- 1/2 tsp urid dal
- few curry leaves
- 1/4 cup fresh grated coconuts
- 1 tsp oil
- salt to taste
- Start by peeling the carrots and trim the top.Take a big plate or vessel and place it on a flat surface. Grate the carrots uniformly without any solid pieces. Grate the coconuts without any brown part.
- Peel the onions and chop it finely. Chop the green chillies into thin rounds.
- Heat oil in a frying pan for about 2 minutes. Add the mustard and urid dal.When urid dal turns golden brown, add the green chillies, curry leaves and onions. Stir and saute them for a few minutes.
- When the onions turn golden brown, add the grated carrots. Stir them continuously.
- Add the required salt and mix them well. Close it with the lid for 3 minutes. Stir them in-between to prevent from sticking to the pan.
- When the grated carrots wilts, add the fresh coconuts. Mix them well and turn off the heat.

After cooking this dish we simply eat this like sundal. Don't forget to a add good amount of fresh coconuts. For these kind of stir fry dish, saute the vegetables with less oil.
