Carrot Puttu - Carrot stir fry with onions and coconuts

This Carrot puttu/stir fry is a quick side dish to pair it with any kuzhambu or rice varieties for your lunch. Whenever I prepare this carrot puttu, I mix it up with lots of chopped onions and fresh grated coconuts. This carrot puttu is both healthy and easy  to make. These carrot puttu is a kind of side dish that you can simply eat it like a salad or you can stuff it for a sandwich and also for a carrot othapam. Always use fresh carrots and fresh coconuts when preparing this dish. Never add any water to cook the carrots as they are very thin and any water during cooking will lose the beautiful orange colour and texture. I prefer small onions for this dish, you can use whatever you want. Finally garnish with a good amount of fresh coconuts.

This Carrot puttu/stir fry is a quick side dish to pair it with any kuzhambu or rice varieties for your lunch.

Ingredients
  • 5 carrots
  • 10 small onions
  • 2 green chillies
  • 1/2 tsp mustard
  • 1/2 tsp urid dal
  • few curry leaves
  • 1/4 cup fresh grated coconuts
  • 1 tsp oil
  • salt to taste
Cooking Directions
  1. Start by peeling the carrots and trim the top.Take a big plate or vessel and place it on a flat surface. Grate the carrots uniformly without any solid pieces. Grate the coconuts without any brown part.
  2. Peel the onions and chop it finely. Chop the green chillies into thin rounds.
  3. Heat oil in a frying pan for about 2 minutes. Add the mustard and urid dal.When urid dal turns golden brown, add the green chillies, curry leaves and onions. Stir and saute them for a few minutes.
  4. When the onions turn golden brown, add the grated carrots. Stir them continuously.
  5. Add the required salt and mix them well. Close it with the lid for 3 minutes. Stir them in-between to prevent from sticking to the pan.
  6. When the grated carrots wilts, add the fresh coconuts. Mix them well and turn off the heat.

 Close it with the lid for 3 minutes. Stir them inbetween to prevent from sticking to the pan.

When the grated carrots wilts, add the fresh coconuts. Mix them well and turn off the heat.Quickly transfer them to the serving bowl to retain the beautiful orange colour.


Enjoy this healthy, tasty and simple Carrot puttu for your next lunch with any rice varieties or kuzhambu. My favourite combinations for this Carrot puttu are lemon rice and Sambar. After cooking this dish we simply eat this like sundal. Don't forget to a add good amount of fresh coconuts. For these kind of stir fry dish, saute the vegetables with less oil.

Kadayam is a small village in the Tenkasi district. . Kadayam village is near to our hometown Ilanji and this vathakuzhambu is a famous dish in a mess. Ridge gourd kootu - one of my favourite kootu dish for lunch. Naturally ridge gourd has a soft texture which is suitable for kootu dishes. Mostly we don't add onions, tomatoes and garlic for kootu dishes. For this ridge gourd kootu I have added both chana dal and moong dal. As the ridge gourd has soft texture, it gets cooked easily in a vessel so need for pressure cooking. Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. Toor dal rice - Tirunelveli (Thuvaram paruppu sadham)

Toor dal rice is my husband's favourite dish. I learnt this recipe from my grandma. This rice really tastes well if you add the right quantity of ingredients. We have to add good amount of small onions, garlic, chillies and asafoetida. In Tirunelveli we prepare this rice for short picnic trips. If you want to add any vegetables in this rice you can add chopped bottle gourd or chopped chayote in the final stage and then pressure cook the rice. This is also one pot meal and it is easy to prepare and also protein packed rice. You can serve this rice without any veg side dishes. Vathal, vadam and appalam are the best accompaniment for this rice. A piece of dry narthangai(citron) pickle is also served with the rice.
