Masala Macaroni

Masala macaroni - macaronis flavoured with masalas, mint leaves, garlics and sauted with vegetables, is enjoyable for kids. This masala macaroni is easy to make for evening tiffin for your kids. Before tossing with the vegetables the macaronis are cooked in plenty of water and drained well. You can add any vegetables as you wish and any macaronis. For this masala macaroni the mint leaves give some unique flavour and taste. Cooking the macaronis can take a few minutes, so cooking them in advance allows minimal work when your kids arrive you can prepare within a couple of seconds.

Ingredients
  • 2 cups macaronis
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 carrots, diced
  • 4 beans, diced 
  • 1 tsp garlic paste
  • few mint leaves
  • 1/2 tsp turmeric powder
  • 1/2 tsp pepper powder
  • 1/2 tsp garamasala or sabji masala powder
  • few coriander leaves
  • 2 tbsp butter
  • salt to taste
Cooking Directions

1. Take a big vessel and boil 8 to 10 cups of water. Add a pinch of salt and oil to the boiling water. Then add the macaronis and cook until soft. 
2. Drain the water completely and allow them to cool down.
3. Heat a kadai and add the butter. Add the finely chopped onions. Saute it for a few minutes and add the garlic paste.
4. When the raw smell of the garlics disappears add the carrots and beans. Stir and saute them on medium flame.
5. Next, add the tomatoes and saute them well. Now close it with a lid for 5 minutes. Stir in between to avoid burns.
6. After 5 minutes, add the turmeric powder, pepper powder, garamasala powder, mint leaves and required salt. Mix them well.
7. Now add the cooked macaronis and mix them gently and evenly. When the macaronis are mixed well with the masalas add the finely chopped coriander leaves and switch off the flame.

2. Heat a kadai and add the butter. Add the finely chopped onions. Saute it for a few minutes and add the garlic paste.

Notes
1. You can add a tbsp of tomato sauce while sauteing the vegetables. 
2. You can add boiled potatoes, green peas also.
3. I do not prefer ginger paste for macaronis, but you can include if you wish.

Tirunelveli Kootanchoru - Mixed vegetables rice with dals and spices

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. In this dish also we have used coconut small onion paste and good amount of fresh vegetables. We add commonly used vegetables such as raw banana, brinjals, drumsticks, carrots, beans and potatoes.
