Baby Corn Fry - Fried Baby Corn Recipe

Baby Corn Fry - baby corns are mixed with a seasoned flour and deep fried till golden. Baby corns have a hard texture that takes more time to cook when compared to paneer and mushrooms.


So I have precooked the baby corn pieces in a separate vessel for 5 minutes. Do not cook more than 5 minutes because it will absorb more oil. Then the cooked baby corn pieces are mixed with the flours. Here also I have used the besan flour, rice flour, corn flour and maida. The flours are seasoned enough with all the flavours to bring a restaurant taste for your kids. It starts with garlic paste, red chilly powder, garam masala powder, chat masala powder, pepper powder and lemon juice. Just mix all the ingredients to the baby corn along with the flours and required salt. Sprinkle a handful of water and mix them gently.

Here I will tell you some important tips for Crispy baby corn fry.

1. Adding corn flour and rice flour gives you a crispy texture without being oily. Do not add more quantity because it will turn hard.
2. The oil temperature is very important for these deep fried snacks. If it is too hot, then it's outside will turn black quickly and if it is too low it will make the pieces oily.
 3. After cooking the baby corn pieces, it is very important to cool down completely and then mixed with the flours.
4. Do not add more water and make the flour runny because the baby corns won't coat properly with the thin batter and it will give you a glossy baby corns. Now let's see how to prepare baby corn fry with step by step instructions.

Ingredients
  • 200 grams baby corn
  • 3 tbsp besan flour
  • 1.5 tbsp maida
  • 1 tbsp rice flour
  • 1 tbsp corn flour
  • 2 tsp garlic paste
  • 1/2 tsp kashmiri chilly powder
  • 1/4 tsp garam masala powder
  • 1/4 tsp pepper powder
  • 1/2 tsp chat masala powder
  • half lemon
  • few curry leaves
  • salt to taste
  • 250 ml oil
Cooking Directions
  1. Wash the baby corns and place it on a cutting board. Using a knife, slit them and cut into small pieces.
  2. Boil 2 to 3 cups of water in a vessel. Add the baby corn pieces to the rapidly boiling water and close it with the lid. Cook for 5 minutes. After 5 minutes, drain the water completely using a colander and allow it to cool down.
  3. Take a bowl and add the cooked baby corn pieces. Sprinkle the besan flour, rice flour, maida and corn flour. Next, add the kashmiri chilly powder, pepper powder, garam masala powder, chat masala powder, garlic paste and required salt.
  4. Squeeze half lemon over the mixture and add a handful of water and make a tight mixture as in the picture below.
  5. Heat oil in a deep frying kadai on medium heat.When the oil is hot enough, add the coated baby corn pieces one by one and fry the pieces on medium heat.
  6. When they are almost done, add a handful of curry leaves and transfer the baby corn pieces to an absorbent paper. Crispy baby corn fries are ready to serve.


Baby Corn Fry with step by step photos
