Vegetable Pulav

Vegetable pulav is one of the easiest rice prepared within 15 minutes. You can prepare this rice for your kids lunch box or any dinner party. In this pulav, the flavours get even better as it cools down. Sometimes this kind of simple pulav with fresh vegetables was so easy to prepare without any much effort.

In this pulav I have used all the basic vegetables and few spices for the flavours. The tomatoes aren't necessary for this pulav, if you want, you can add a little one. Garnish with extra vegetables like red capsicums or green capsicums or any nuts whatever you would like. Now let's see how to prepare this easy and simple vegetable pulav. Ingredients
  • 1/2 cup(100g) basmati rice
  • 1 cup water
  • 1 onion, thinly sliced
  • 2 green chillies, slit lengthwise
  • 1 small carrot, cut lengthwise into 2 cm long strips
  • 4 beans, cut diagonally into 2 cm long strips
  • 1/4 cup fresh green peas
  • 1 bay leaf
  • 2 small piece cinnamon
  • 1/4 tsp cumins
  • 2 cloves
  • 2 cardamom
  • few cashew nuts
  • few coriander leaves
  • salt as required
  • 1 tbsp ghee or oil

Cooking Directions
  1. Wash the rice gently and drain the water completely. Heat a tsp of ghee in a pan and fry the cashew nuts till golden brown. Keep aside.
  2. Heat remaining ghee and add all the spices. Stir for a few seconds and add the onions and green chillies.
  3. Saute till the onions are translucent and add carrots, peas and beans. Stir fry for about 2 minutes. Transfer it to the pressure cooker and add water and required salt. Stir and add the rice.
  4. Close the cooker and pressure cook for 2  whistles on low heat. Allow to cool naturally.
  5. Open the cooker and add the finely chopped coriander leaves and fried cashew nuts. Mix the rice gently.

Vegetable Pulav with step by step photos 


Take the rice in a bowl and wash the rice 2 to 3 times in cold water. Drain the water completely. You can also use jeera samba rice or ponni raw rice for this pulav. Heat a tsp of ghee in a pan and fry the cashew nuts till golden brown. Keep aside.


Heat  ghee in a  kadai for about 2 minutes and add all the spices. Stir for a few seconds and add the onions and green chillies.


Saute till the onions are translucent and add carrots, peas and beans. Stir fry for about 2 minutes.


Now transfer these sauted vegetables to a pressure cooker and add 1 cup water and required salt.


Stir and add 1/2 cup rice. Close the cooker and pressure cook for 2  whistles on low heat. Allow to cool naturally.


Open the cooker and gently mix the rice.

Transfer the rice to the serving pot and garnish with the fried cashew nuts and finely chopped coriander leaves.

Enjoy this rice with any mild gravy or any vegetable stir fry.

This is a wonderful Tirunelveli Ladies finger pachadi that is usually served with sambar and rasam. There are many versions for this recipe. This version includes ladies finger, tomato, raw mangoes and it gets flavouring from small onions, red chilly powder and asafoetida powder.  The coconut paste adds a delicious richness to the pachadi. Simple to make and a very tasty side dish for traditional South Indian meals.

I always like to work any greens into our diet because they are just good for you and I happen to know these types of kootu are really delicious with any South Indian meals and also for rotis & parathas. I like paruppu keerai greens very much because it's flavorful and quite healthy. I added some chopped tomatoes for taste and soaked moong dal for thickness and as usual, small onions coconut paste for the flavours. You can eat them as a side dish or you can mix it in a bowl of plain rice and eat it as a meal. I kept the ingredients pretty simple, but if you want to make it rich you could add some chopped garlics, green chillies or even some chopped big onions. The amount of kootu that this recipe makes will vary a quite bit depending on the size of the keerai(greens) bunch. My kootu yielded about 2 cups, but you could even add another bunch if you want more.

Toor dal rice - Tirunelveli (Thuvaram paruppu sadham)

Toor dal rice is my husband's favourite dish. I learnt this recipe from my grandma. This rice really tastes well if you add the right quantity of ingredients. Suraikai (bottle gourd) adais are healthy and filling dish for breakfast. These Suraikai (bottle gourd) adais are made with chana dal, toor dal, urid dal, rice and grated bottle gourd.

Brinjal(Eggplant)/Kathirikkai kichadi

Brinjal(Eggplant)/Kathirikkai kichadi is a popular side dish in Tirunelveli served for idly or dosa. The white or green brinjals (thinner varieties) are more ideal for this kichadi. The small finger sized purple brinjals also taste good for this kichadi.

Nanjil Sambar - Nagercoil Style Sambar

Nanjil Sambar - prepared with the  combination of seasonal vegetables, toor dal and flavoured with freshly prepared sambar powder. Another interesting recipe from my Rema athai. As Nagercoil is her hometown, I learned many nanjil recipes from her.
