In this pulav I have used all the basic vegetables and few spices for the flavours. The tomatoes aren't necessary for this pulav, if you want, you can add a little one. Garnish with extra vegetables like red capsicums or green capsicums or any nuts whatever you would like. Now let's see how to prepare this easy and simple vegetable pulav. Vegetable pulav recipe
Vegetable pulav is one of the easiest rice prepared within 15 minutes. You can prepare this rice for your kids lunch box or any dinner party.

Ingredients
- 1/2 cup(100g) basmati rice
- 1 cup water
- 1 onion, thinly sliced
- 2 green chillies, slit lengthwise
- 1 small carrot, cut lengthwise into 2 cm long strips
- 4 beans, cut diagonally into 2 cm long strips
- 1/4 cup fresh green peas
- 1 bay leaf
- 2 small piece cinnamon
- 1/4 tsp cumins
- 2 cloves
- 2 cardamom
- few cashew nuts
- few coriander leaves
- salt as required
- 1 tbsp ghee or oil
Cooking Directions
- Wash the rice gently and drain the water completely. Heat a tsp of ghee in a pan and fry the cashew nuts till golden brown. Keep aside.
- Heat remaining ghee and add all the spices. Stir for a few seconds and add the onions and green chillies.
- Saute till the onions are translucent and add carrots, peas and beans. Stir fry for about 2 minutes. Transfer it to the pressure cooker and add water and required salt. Stir and add the rice.
- Close the cooker and pressure cook for 2 whistles on low heat. Allow to cool naturally.
- Open the cooker and add the finely chopped coriander leaves and fried cashew nuts. Mix the rice gently.
Vegetable Pulav with step by step photos
Take the rice in a bowl and wash the rice 2 to 3 times in cold water. Drain the water completely. You can also use jeera samba rice or ponni raw rice for this pulav. Heat a tsp of ghee in a pan and fry the cashew nuts till golden brown. Keep aside.
Heat ghee in a kadai for about 2 minutes and add all the spices. Stir for a few seconds and add the onions and green chillies.
Saute till the onions are translucent and add carrots, peas and beans. Stir fry for about 2 minutes.
Now transfer these sauted vegetables to a pressure cooker and add 1 cup water and required salt.
Stir and add 1/2 cup rice. Close the cooker and pressure cook for 2 whistles on low heat. Allow to cool naturally.
Open the cooker and gently mix the rice.
Transfer the rice to the serving pot and garnish with the fried cashew nuts and finely chopped coriander leaves.
Enjoy this rice with any mild gravy or any vegetable stir fry.
