Sarkkarai Pongal - this is a quick and easy dish for prasadam. And this Sarkkarai Pongal has also been an absolute favourite prasadam for many of us. The taste of this Sarkkarai Pongal, depend on the quality of the jaggery we use. I usually prefer pagu vellam for pongal and payasam dishes. The colour and taste of this jaggery vary from place to place. Some jaggery are dark brown while others are yellow or orange coloured jaggery. In this recipe, I have used the dark brown jaggery and it tastes so good. My husband bought me this dark brown jaggery (Kottayam Vellam) from Nanguneri. Now let's see some important tips for perfect Sarkkarai Pongal.

Ingredients 

  • 1 cup rava
  • 2.5 cups water
  • 1 onion, finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp ginger, finely chopped
  • 1 carrots, finely cubed
  • 6 beans, finely chopped
  • 1 small potato, finely cubed
  • 1/4 cup fresh green peas
  • 1 tomato, finely chopped
  • few curry leaves
  • few coriander leaves
  • 1/2 tsp mustard
  • 1/2 tsp urid dal
  • 1 tsp channa dal
  • 2 tbsp coconut oil
  • 1 tbsp ghee
  • salt to taste
Cooking Directions
1. Heat a pan and roast the rava. Roast them well till you get a nice aroma. Transfer it to a plate. Heat 2 tbsp coconut oil in a kadai and add the mustard and urid dal. When it splutters add the channa dal, green chillies and chopped gingers. When the green chillies are fried well add the onions. Saute them well.
2. Next, add the carrots, beans, peas and potatoes. Continuously saute it for a few minutes. When the vegetable colour has changed a little add the tomatoes and curry leaves. Mix them well along with the vegetables.
3. Now add 2.5 cups of water. Add turmeric powder and required salt. Allow them to boil. Add the ghee.
4. When it starts boiling, slowly add the rava little by little with your left hand and stir it continuously with your right hand.
5. Once you add all the rava, reduce the flame and stir well with a ladle. Finally add the chopped coriander leaves and transfer it to the serving pot.

1. Heat a pan and dry roast the rava. Roast them well till you get a nice aroma. Transfer it to a plate. You can also add a drop of ghee and fry the rava.



2. Heat 2 tbsp coconut oil in a kadai and add the mustard and urid dal. When it splutters add the channa dal, green chillies and chopped gingers. When the green chillies are fried well add the onions. Saute them well.



3. Next, add the carrots, beans, peas and potatoes. Continuously saute it for a few minutes.  



4. When the vegetable colour has changed a little add the tomatoes and curry leaves. Mix them well along with the vegetables. (Now you can add a pinch of garamasala powder if you wish).



5. Now add 2.5 cups of water. Add turmeric powder and required salt. Allow them to boil. Add the ghee.



6. When it starts boiling, slowly add the rava little by little with your left hand and stir it continuously with your right hand. 



7. Once you add all the rava, reduce the flame and stir well with a ladle. Finally, add the chopped coriander leaves and transfer it to the serving pot. If you add less water to your upma, close it with a lid and cook them on low flame for 5 minutes or sprinkle some water over the upma and cook. Finally, you can add a tbsp of lemon juice. 






8. Serve it hot with coconut chutney. You can also add fried cashewnuts before serving. Enjoy this yummy vegetable rava upma with your family.
