Vegetable rava upma
This Vegetable rava upma or kichdi is a very common breakfast in India. Among food items of India, the sooji has numerous food varieties like rice. Upma is the evergreen food, which can be prepared in a matter of minutes. This upma is a special and healthy breakfast dish with the addition of colourful vegetables.
You don't need to pre cook the vegetables for this upma. Just saute them well in the oil along with the onions and cook the rava by the general method. Roasting the rava well will give you the perfect results. This is a simple recipe that is easy for your weekdays breakfast or dinner. No grinding, not even pressure cooking the vegetables. Ingredients
1. Heat a pan and roast the rava. Roast them well till you get a nice aroma. Transfer it to a plate. Heat 2 tbsp coconut oil in a kadai and add the mustard and urid dal. When it splutters add the channa dal, green chillies and chopped gingers. When the green chillies are fried well add the onions. Saute them well.
2. Next, add the carrots, beans, peas and potatoes. Continuously saute it for a few minutes. When the vegetable colour has changed a little add the tomatoes and curry leaves. Mix them well along with the vegetables.
3. Now add 2.5 cups of water. Add turmeric powder and required salt. Allow them to boil. Add the ghee.
4. When it starts boiling, slowly add the rava little by little with your left hand and stir it continuously with your right hand.
5. Once you add all the rava, reduce the flame and stir well with a ladle. Finally add the chopped coriander leaves and transfer it to the serving pot.

If you add less water to your upma, close it with a lid and cook them on low flame for 5 minutes or sprinkle some water over the upma and cook. Finally, you can add a tbsp of lemon juice.
