This Nullikai urundai/Urid dal balls is Tirunelveli's famous snack dish. I learnt this recipe from my uncle(periyappa). He prepares these soft and crispy Nullikai urundais frequently and he enjoys serving this hot snack for us with a cup of coffee. This is a healthy and easy snack item which can be prepared easily without much effort. These balls have a crispy outer layer with soft texture. The key to this recipe, for preparing crispy balls is the soaking and grinding.First thing is you need to soak the dal and rice for 3 to 4 hours. The second thing is the batter should be fluffy and thick. If the batter is watery the ball shape may vary while frying. When deep frying the balls, always keep the flame on low medium. - 1 cup urid dal
- 1/2 cup raw rice
- 3/4 cup fresh grated coconut
- 2 tsp crushed black pepper
- few finely chopped curry leaves
- salt to taste
- oil for deep frying
Cooking Directions
1. Measure and take the urid dal and rice in a bowl. Wash them nicely in cold water for 2 to 3 times. Soak them with 2 cups of water for 3 to 4 hours .
2. After 3 hours, drain the water completely and add it to the big mixer jar. Grind it smoothly. Sprinkle with some water and grind. When they are fluffy transfer it to mixing bowl.
3. Next, add the crushed black pepper, chopped curry leaves, finely grated coconut and required salt. Mix them evenly and check for the seasonings.
4. Heat oil in a deep kadai or pan on low medium flame. When the oil is hot, take small balls from the batter and drop it to the hot oil. Repeat the process. Slowly flip the balls and fry them till golden brown. Then drain them in a paper towel. Serve it hot with coconut chutney or tomato chutney. Enjoy this quick and healthy snack with your family with a cup of filter coffee.
