Mixed veggies and cheese sandwich

From the name itself, you can identify these sandwiches are made with fresh vegetables. To add extra taste I have added some grated cheese and a little oregano. This sandwich feels so filling and it is perfect for breakfast. Along with this sandwich you can have a bowl of sliced cucumbers or a cup of apples. Each mouthful of this sandwich feels so complete. This is a very easy recipe that never fails.

Ingredients
  • 8 slices sandwich bread
  • 2 amul cheese cubes (amul processed chesse block)
  • 1 medium tomato, finely chopped
  • 1/4 cup grated carrot
  • 1/4 cup shredded cabbage
  • 1/4 cup chopped capsicum
  • 1/2 tsp black pepper powder
  • 1/2 tsp oregano
  • salt to taste
  • 2 - 3 tbsp butter for toasting
 Cooking Directions

1. Take a wide bowl and add all the vegetables one by one. (cabbage, capsicum, tomatoes and carrots).
2. Now add the oregano, black pepper powder and salt (Be careful while adding salt, because cheese also contains added salt in it). Grate the cheese finely using a cheese grater and mix them evenly and gently.
3. Take a bread slice and spread 2 tablespoons of mixed veggies on it and cover it with another slice(you can gently press). Repeat the process for all the bread slices.
4. Add butter in the pan and toast the sandwich. After 2 minutes, gently flip them and apply butter on the other side and toast for 5 minutes or till golden and crisp from both sides. 
5. Cut the sandwich with a knife and serve it with tomato ketchup.

Tirunelveli Kootanchoru - Mixed vegetables rice with dals and spices

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. Tomato green chilly chutney - Tomato chutney with green chillies - Side dish for Idli, Dosa and Ven Pongal

In most of our houses we prepare either coconut chutney with red chillies or green chillies as an accompaniment for idlies and dosas. Sometimes these two chutneys are really boring on regular rotations. One day my Chithi(aunt) taught me this different tomato chutney with green chillies. Normally for tomato chutney we add dried red chillies or red chilly powder, but in this dish the tomatoes are cooked along with green chillies and then made into a paste.
