This easy thokku is the most delicious way to use up your raw mangoes.Raw mango thokku is a popular condiment that accompanies many South Indian foods and also for the rotis. This thokku is slightly sweet and mildly hot. I particularly like them with a bowl of curd rice. I like to use fenugreek powder in my thokku as it has more authentic
flavour. Please don't forget to add it because you will enjoy the
flavour when you taste the thokku. The totapuri mangoes (kili mooku
mangoes) taste best for this thokku. This thokku is the perfect way to
use the seasonal produce you found at the market or in your garden. Make this thokku a
large batch to give your friends and relatives so that they also can
enjoy it. Let's see how to prepare this raw mango thokku with step by step photos.
Prep time : 10 minutes
Cook time : 15 minutes
Total time : 25 minutes
Yield : 250 grams
Ingredients
1. Wash and peel the mangoes. Grate 1 mango finely using a carrot grater and 1 mango thinly using the chip slicer.
2. Heat the kadai and dry roast the fenugreek until brown or some fenugreek will pop up. Switch off the flame and powder it coarsely.
3. Heat the gingelly oil in the kadai and add the mustard seeds and urid dal. When it splutters add the thin mango slices and saute them.
4. After 2 minutes, add the grated mangoes. Saute for 2 to 3 minutes.
5. Then add the required salt and allow the mangoes to cook nicely in the oil.
6. When the mangoes become soft, add the chilly powder, turmeric powder and asafoetida powder.
7. Mix and stir well. Then add the jaggery to the thokku.
8. Keep the flame low and allow the thokku to combine well till the oil floats on the top of the thokku. Finally, add the fenugreek powder, mix well and switch off the flame.
9. This is the final stage of the thokku as shown in the picture. Allow it to cool completly and store it in a glass jar. Yummy and tasty mango thokku is ready. This thokku will remain good for 1 month if refrigerated.
