The potato is a commonly used vegetable in our kitchen and you can prepare these chips when you have free time. The potatoes are sliced thinly and then soaked in the water for 20 to 30 minutes to remove the starch in it. After 20 minutes, the slices are dried in a white cloth for 2 hours without any moisture. This method helps to get a  crispy chips. Soaking and drying the slices are the important steps that you must follow for this potato chips. Once the slices are dried without any moisture, then they are deep fried on low heat. For deep frying little patience is very important to get perfect results. Don’t be hurry to finish the frying process, because the chips will turn soggy or you will get a brown colour chips. The final procedure is the seasoning step and you can add your favourite flavours as you wish.

Ingredients
  • 3 large potatoes
  • 1 tsp turmeric powder
  • 2 tsp red chilly powder
  • 1 tsp black pepper powder
  • 500 ml oil
  • salt to taste
Cooking Directions
  1. Peel the potatoes with a sharp knife or a peeler uniformly.Wash immediately and put the peeled potatoes in a bowl filled with water for 20 minutes.
  2. After 20 minutes, once again wash the potatoes in water. Fill the bowl with sufficient water and slice the potatoes thinly directly in the water. 
  3. Place a white cloth on your kitchen counter and place the potato slices in a single layer. Switch on your kitchen fan and let them  dry for 1.5 to 2 hours.
  4. Heat oil in a wide kadai on medium heat. When the oil is heated not smoking hot, add the potato slices one by one and fry them turning once for 5 minutes on low heat. Transfer the potato chips and drain on a strainer. 
  5. In a plate, mix the red chilly powder along with salt and black pepper powder. Mix them well with a spoon and keep it ready.
  6. Now use a tablespoon and sprinkle little by little on the chips and shake it gently from top to bottom. Taste and adjust the seasonings if required.

Peel the potatoes with a sharp knife or a peeler uniformly. Wash immediately and put the peeled potatoes in a bowl filled with water for 20 minutes.


After 20 minutes, once again wash the potatoes in water. Fill the bowl with sufficient water and slice the potatoes thinly directly in the water.  Keep it undisturbed for 20 minutes.

Place a white cloth on your kitchen counter and place the potatoslices in a single layer.

Switch on your kitchen fan and let them dry for 1.5 to 2 hours. After 2 hours, the slices will look like this as in the picture. Now take a handful of slices in your hand and keep it ready for frying.

Heat oil in a wide kadai on medium heat. When the oil is heated not smoking hot, add the potato slices one by one and fry them turning once for 5 minutes on low heat.  

Transfer the potato chips and drain on a strainer  If some chips have soft centers, fry them back for a few minutes.  Repeat the process for the entire slices and add it in a big container.


In a plate mix the red chilly powder along with salt and black pepper powder. Mix them well with a spoon and keep it ready.

Now use a tablespoon and sprinkle little by little on the chips and shake it gently from top to bottom. 

Taste and adjust the seasonings if required. Serve the chips for your kids for a snack or even as a side dish with lemon rice, tamarind rice etc.

Seppankizhangu Poriyal  - this poriyal is prepared with taro root, chilly powder, small onions cumin garlic paste and perfectly roasted in an iron kadai. The best cooking method for this taro root poriyal is to cook the taro roots in an open vessel for 10 minutes on medium heat with a good amount of water. No one likes a mushy taro root, so just keep an eye on it and check them for doneness by inserting a knife. If you cook taro roots in a pressure cooker, it will be too soft and turns mushy. For these types of roast dishes, low heat and long cooking times are important for its texture. The small onions cumin garlic paste, adds flavour to the taro roots. This is the popular street food recipe from Tirunelveli called mochai. A healthy semi dry gravy with mochai prepared in streetside pushcarts across many places in Tirunelveli and Tuticorin.  Until recently I never had a chance to taste this mochai but my husband tasted it many times during their school days. Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. Pasiparuppu Thuvaiyal - Moong Dal Chutney for Rice

Pasiparuppu thuvaiyal -  we use to make thuvaiyal with different kind of dals (fried grams, chana dal, horse gram and moong dal) as a side dish for tamarind rice or tamarind based kuzhambu dishes.
