Kuzhambus are the foundation for a good lunch in South Indian cuisine. Although there are many rice varieties in South Indian cuisine, a bowl of rice and kuzhambu with any vegetable side dish makes our tummy happy. In this collection, I have shared many traditional Tirunelveli kuzhambu recipes. I have suggested authentic ingredients and spices in my kuzhambu recipes. 1. Sodhi - Sodhi is one of Tirunelveli's traditional and popular kuzhambu.This kuzhambu is a special menu on the next day of marriage. A Tirunelveli wedding meal would not be complete without this Sodhi, potato poriyal and ginger chutney.  RECIPE HERE.


2. Pulikuzhambu - The best and the most authentic Tirunelveli recipe is this Pulikuzhambu. This dish is tangy and spicy with unique taste. RECIPE HERE. 



3. Tirunelveli Sambar There are many variations for sambar depending on region or taste preferences. Tirunelveli sambar has some variations in the taste and the ingredients. RECIPE HERE.



4. Puli Illa KuzhambuIt is prepared with drumstick leaves, pepper, jeera and toor dal or moong dal. It tastes best when served hot with a tsp of ghee spread over the hot rice. RECIPE HERE.


5. Mint leaves PulikuzhambuThis dish takes only 20 minutes from start to finish and it gives you a healthy dish. The kuzhambu flavor comes from  browning the mint leaves, small onions and garlics well in medium flame. RECIPE HERE.


6. Idi sambar - Idi sambar is one of my favourite sambar. Give it a try when you want something special but quick and easy. An important first step to note when making this sambar is to bring the frying pan up to the required heat and fry the spices for about 3 minutes or until fragrant. 7. Pepper PulikuzhambuPepper pulikuzhambu - easy, tasty and healthy kuzhambu that is loaded with excellent flavours. This kuzhambu is perfect during winter season. If you want to spend less time in your kitchen you can cook this kuzhambu with minimal work and time. RECIPE HERE.


8. Curry leaves Karakuzhambu - This kuzhambu is all about curry leaves as the star ingredient; it is best possible to use fresh curry leaves rather than the dried one. I have tried a few different variations of kuzhambu with curry leaves, but this is my favourite. It's so simple with few  ingredients in it.

9. Green Chilly Sambar (Kili Potta Sambar) This green chilly sambar is light, flavourful and packed with combination of dals and veggies.This sambar is a delicious variation of regular sambar that we usually make at home. RECIPE HERE. 



10. Vellai Curry - Vellai curry is another popular kuzhambu from Tirunelveli. Very few ingredients, fast and really tasty.This Vellai curry is served along with kadaintha keerai ( keerai masiyal) or paruppu(dal) with plain rice. This kuzhambu is similar to karakuzhambu. RECIPE HERE.


11 . Radish SambarThis is one of the easiest and tastiest South Indian Sambar made within 30 minutes. This dish is a speedy fix for your unplanned weekday lunch.Radish has many nutritional and health benefits. RECIPE HERE.



12. Keerai SambarGreens sambar is a wonderful combination of dal, greens and onions. It goes well with rice and even chapatis or poori. You can use any type of keerai(greens) for this sambar. RECIPE HERE.



13. Kathrikai Kothsu This kuzhambu is light and at the same time quite filling. The perfect combination for this kuzhambu is raw banana fry and fried gram thuvaiyal. This kuzhambu has a smooth texture and a lovely pale green colour. RECIPE HERE.


14. White Pumpkin SambarWhite pumpkin sambar - Easy, flavourful and healthy dish with white pumpkins and karamani. Just little things like chopping the white pumpkins and cooking the dals. You may also substitute karamani (black eye beans) with any other cooked lentils depending on your preference. RECIPE HERE.

15. Rasam - In South Indian cuisine, there is nothing simpler than a rasam. Rasam is prepared with lots of spices and flavours and just takes a few minutes to prepare with simple process. RECIPE HERE.


16. Mor Kuzhambu - This mor kuzhambu is an easy traditional kuzhambu from South India made with butter milk. We prepare, the mor kuzhambu with any vegetables very often, and this mor kuzhambu with paruppu vada is our family favourite. RECIPE HERE.

17.  Kara Kuzhambu - spicy and tangy kuzhambu with a combination of different flavours.The kara kuzhambu can be  prepared in two ways -  with vegetables like drumstick or brinjal and the other one is prepared with dried vathals like sundakkai vathal etc. RECIPE HERE. 
  


18. Pacha Milaga Sambar - Pacha Milaga Sambar - Sambars are prepared in different ways. They may be prepared by using different kinds of vegetables with different methods. This Pachai milaga sambar is also different Sambar without any sambar powder. RECIPE HERE. 
 Tomato garlic rasam

19.Tomato garlic rasam - Many South Indian rasams are based on tomatoes. Typical rasam is made with little tamarind extract, tomatoes and seasoned with pepper, curry leaves, asafoedita and coriander leaves. This rasam is also with basic ingredients, but I have skipped the tamarind extract and rasam powder. RECIPE HERE.

20. Sundakkai (Turkey Berry) Karakuzhambu - Sundakkai karakuzhambu is prepared using fresh green sundakkai, small onions, garlics, tomatoes and ground coconut paste. The sundakkai are sauted well in the oil and then cooked in the tamarind extract along with the red chilly powder. RECIPE HERE.

Every day we prepare two varieties of vegetable side dishes for our lunch. Among those two varieties there must be a poriyal dish and the other one is kootu, aviyal or varuval. Varieties of poriyal  dishes are countless with our seasonal vegetables. As I said in my poriyal or thuvaram dishes, we add the ground coconut mixture prepared with coconut, small onions, garlic cloves and red chilly or green chilly. This unique coconut paste is often used in our poriyal or thuvaram dishes. Some prefer to add grated coconut or desiccated coconut powder for poriyal dishes. I actually don't like poriyal dishes made without any flavours. For me, poriyal must have a mix of flavours with perfect textures. We usually precook the vegetables in a vessel (except for keerai poriyal) and then we saute it with the tempering ingredients and finished with our coconut mixture. Carrot Capsicum Stir Fry - another low calorie side dish for chapathi and rice. You can prepare this healthy side dish within 10 minutes. Last year during lockdown I prepared many sabji recipes for the Aval Vikatan magazine. This carrot capsicum stir fry is also one among those dishes and l often prepare this stir fry for our dinner. Tirunelveli Kootanchoru - Mixed vegetables rice with dals and spices

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. In this dish also we have used coconut small onion paste and good amount of fresh vegetables. We add commonly used vegetables such as raw banana, brinjals, drumsticks, carrots, beans and potatoes. I have learned this recipe from my grandma. She taught me with her some useful tips and techniques about how to cook, when to add the ingredients and how to choose the correct vegetables. In most of our houses we prepare either coconut chutney with red chillies or green chillies as an accompaniment for idlies and dosas. Vegetable ragi millet noodles recipe with step-by-step instructions. Recently I bought this ragi millet noodles from mothers millets brand in a supermarket.
