Schezwan Veg Noodles

This spicy Schezwan veg noodles are made with red chilly paste and tossed with fresh vegetables. The red chilly paste adds colour to the noodles and finely chopped ginger, finely chopped garlics and finely chopped celeries add flavor to the noodles. The other ingredients are regular sauces, pepper powder and finally garnished with beautiful spring onion leaves. Without spring onions and celery you can't get the authentic  flavor. The preparation work is little bit tough, but the cooking time is very quick. For this noodles I have used the Kashmiri red chilly for the red paste. I have added some chopped garlics while grinding the red paste. The best thing is after tossing the noodles serve it immediately so that you can enjoy the hot and spicy noodles.

Schezwan Veg Noodles with step by step photos

Ingredients

  • 1 pack plain Hakka noodles (200g)
  • 1 onion
  • 1 carrot
  • 1 capsicum
  • small piece cabbage
  • 15 garlic cloves
  • small piece ginger
  • 1 tsp black or white pepper powder
  • 1 tbsp soya sauce
  • 3 tbsp tomato sauce
  • few celery
  • few spring onions
  • 1 tsp sugar
  • salt
  • 2 tbsp oil
For red paste
  • 7 - 10 kashmiri red chilly
  • 1 tbsp finely chopped garlics
  • 1/4 tsp salt
Cooking Directions 

1. Soak the red chillies in warm water for 30 minutes. Then drain the water, grind it nicely along with the garlics and 1/4 tsp salt.


2. Slice the onions and slice the capsicums thinly. Shred the cabbages thinly and cut the carrots thinly. Peel the skin and chop the ginger finely. Peel and chop the garlics finely. Chop the celeries and spring onion leaves finely.



3. Cook the noodles according to the package instructions. Drain the noodles and allow them to cool in a wide plate. 


4. Heat oil in a broad kadai or pan. Keep on high flame. Allow them to heat nicely. Now add the finely chopped ginger and garlics. Stir and saute it continuously. Do not brown them. Next, add the onions.(You can also add sliced scallions). Saute it for a minute.


5. Now add the carrots and saute it for a minute. Add the sliced capsicums and shredded cabbage and give it a quick stir.



6.Then add the finely chopped celeries. Stir and add 5 tsp red paste.


7. Add the sugar and black pepper powder. Mix them well. Do not decrease the flame. Continue to toss it quickly and add the soya sauce and tomato sauce.



8.Stir it quickly and add the pre cooked noodles. Add the required salt and mix them well. Use 2 ladles and mix them well.


9. If the noodles appear dry, add some tomato sauce and soya sauce in this stage and finally garnish with the chopped spring onion leaves. Immediately transfer it to the serving bowl and serve it hot.

Kadayam is a small village in the Tenkasi district. . Kadayam village is near to our hometown Ilanji and this vathakuzhambu is a famous dish in a mess. Ridge gourd kootu - one of my favourite kootu dish for lunch. Naturally ridge gourd has a soft texture which is suitable for kootu dishes. Mostly we don't add onions, tomatoes and garlic for kootu dishes. For this ridge gourd kootu I have added both chana dal and moong dal. This is a wonderful Tirunelveli Ladies finger pachadi that is usually served with sambar and rasam. There are many versions for this recipe. Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. Toor dal rice - Tirunelveli (Thuvaram paruppu sadham)

Toor dal rice is my husband's favourite dish. I learnt this recipe from my grandma. This rice really tastes well if you add the right quantity of ingredients. We have to add good amount of small onions, garlic, chillies and asafoetida. In Tirunelveli we prepare this rice for short picnic trips. If you want to add any vegetables in this rice you can add chopped bottle gourd or chopped chayote in the final stage and then pressure cook the rice. This is also one pot meal and it is easy to prepare and also protein packed rice. You can serve this rice without any veg side dishes. Vathal, vadam and appalam are the best accompaniment for this rice. A piece of dry narthangai(citron) pickle is also served with the rice.
