Schezwan Veg Noodles
This spicy Schezwan veg noodles are made with red chilly paste and tossed with fresh vegetables. The red chilly paste adds colour to the noodles and finely chopped ginger, finely chopped garlics and finely chopped celeries add flavor to the noodles. The other ingredients are regular sauces, pepper powder and finally garnished with beautiful spring onion leaves. Without spring onions and celery you can't get the authentic flavor. The preparation work is little bit tough, but the cooking time is very quick. For this noodles I have used the Kashmiri red chilly for the red paste. I have added some chopped garlics while grinding the red paste. The best thing is after tossing the noodles serve it immediately so that you can enjoy the hot and spicy noodles.

Schezwan Veg Noodles with step by step photos

Ingredients
- 1 pack plain Hakka noodles (200g)
- 1 onion
- 1 carrot
- 1 capsicum
- small piece cabbage
- 15 garlic cloves
- small piece ginger
- 1 tsp black or white pepper powder
- 1 tbsp soya sauce
- 3 tbsp tomato sauce
- few celery
- few spring onions
- 1 tsp sugar
- salt
- 2 tbsp oil
For red paste
- 7 - 10 kashmiri red chilly
- 1 tbsp finely chopped garlics
- 1/4 tsp salt
Cooking Directions
1. Soak the red chillies in warm water for 30 minutes. Then drain the water, grind it nicely along with the garlics and 1/4 tsp salt.
2. Slice the onions and slice the capsicums thinly. Shred the cabbages thinly and cut the carrots thinly. Peel the skin and chop the ginger finely. Peel and chop the garlics finely. Chop the celeries and spring onion leaves finely.
3. Cook the noodles according to the package instructions. Drain the noodles and allow them to cool in a wide plate.
4. Heat oil in a broad kadai or pan. Keep on high flame. Allow them to heat nicely. Now add the finely chopped ginger and garlics. Stir and saute it continuously. Do not brown them. Next, add the onions.(You can also add sliced scallions). Saute it for a minute.
5. Now add the carrots and saute it for a minute. Add the sliced capsicums and shredded cabbage and give it a quick stir.
6.Then add the finely chopped celeries. Stir and add 5 tsp red paste.
7. Add the sugar and black pepper powder. Mix them well. Do not decrease the flame. Continue to toss it quickly and add the soya sauce and tomato sauce.
8.Stir it quickly and add the pre cooked noodles. Add the required salt and mix them well. Use 2 ladles and mix them well.
9. If the noodles appear dry, add some tomato sauce and soya sauce in this stage and finally garnish with the chopped spring onion leaves. Immediately transfer it to the serving bowl and serve it hot.
