During the summer season, drinking a cup of Kambu koozh with buttermilk and small onions is a great way to stay hydrated and cool. Pearl millet is high in iron, calcium and folic acid. The millets are coarsely powdered and then cooked in pressure cooker. The cooked millets then mixed with fresh buttermilk. Top the porridge with finely chopped small onions. All you need are a few good ingredients like pearl millets, buttermilk and small onions for this healthy porridge. You can cook the pearl millets ahead of time to prepare the porridge within 5 minutes.

Ingredients
Add this powdered pearl millet rava in a pressure cooker or pan. Pour 4 cups water and soak for 20 minutes. (Use a small 2 ltr pressure cooker)
Close the pressure cooker with the lid and pressure cook for 2 to 4 whistles. Turn off the heat.Open the cooker and mash the millets with the ladle and allow them to cool completely. Add the required salt and mix them well.
Finally add the chopped onions to the porridge and serve it with any pickle or chutney. You can also serve it with a small green chilly or mor milagai.

- 1/2 cup pearl millet ( kambu/Bajra)
- 3 to 4 cups fresh buttermilk
- 10 small onions, finely chopped
- salt to taste
- Measure and take the pearl millets in a big mixer jar and powder them coarsely.
- Add this powdered pearl millet rava in a pressure cooker or pan. Pour 4 cups water and soak for 20 minutes.
