Mixed Vegetable Soup


Mixed vegetable soup prepared with carrots, tomatoes, cauliflower and potatoes. There are endless varieties in preparing a soup. In this soup you can include additional vegetables like radish, beetroots, cabbage, broccoli, green peas and chayote. There is no need for any additional flour like corn flour or any other thickening agents.

This soup is great for kids, elderly people and also a perfect appetizer for a dinner party. There are so many ways you can do this mixed vegetable soup, but this recipe is easy and healthy. I like the lemon juice flavour in my soup so I have squeezed it while serving. If you want to add some protein to your soup, you can add a tbsp of moong dal along with the vegetables. Now we will easy how to prepare this easy and healthy soup.

Ingredients
  • 2 small carrots
  • 3 tomatoes
  • 5 cauliflower florets
  • 1 potato
  • 1 tsp whole black pepper
  • 1 tbsp unsalted butter
  • 1 tsp sugar (optional)
  • 2 tbsp finely chopped spring onions or coriander leaves
  • 1 lemon
  • 1 tsp black pepper powder
  • salt to taste
Cooking Directions

  1. Take a small pressure cooker and add all the vegetables. Add the whole black pepper and pour 1 cup of water and close it with the lid. Pressure cook for 5 whistles.
  2. Open the cooker and allow them to cool down.
  3. Add the cooked vegetables to the big mixer jar and grind it nicely. Add this ground vegetable puree to the vessel.
  4.  Add the required salt  and  allow the soup to boil.
  5. When the soup starts boiling add the sugar. After few minutes, add the butter and turn off the heat. 
  6. Finally garnish with chopped spring onions or coriander leaves.
  7. Sprinkle pepper powder and squeeze the lemon juice over the soup and serve it hot.

 Peel the carrots and cut into big pieces. Peel the potato and cut the in big quarter. Cut the tomatoes and cauliflower florets.


Take a small pressure cooker and add all the vegetables. Add the whole black pepper and pour 1 cup of water and close it with the lid. Pressure cook for 5 whistles.

 Allow the pressure to settle down naturally. Open the cooker and allow them to cool down.

 Add the cooked vegetables to the big mixer jar and grind it nicely.

Add this ground vegetable puree to the vessel. Rinse the mixer jar with 1 to 2 cups of water and add it to the vegetable puree. If the soup appears thick, add some more water. Add the required salt and  allow the soup to boil.

When the soup starts boiling add the sugar . Allow it to boil for a few second. 


When white foamy layer appears on the top of the soup, add the butter and turn off the heat. 


Finally garnish with chopped spring onions or coriander leaves.

Kootanchoru is a popular lunch dish from Tirunelveli. This is our family favourite rice and it is rich in nutrients as it contains lots of vegetables and dals. We prepare this rice frequently for special events and family get togethers.  In most of Tirunelveli dishes we use small onions, garlic, coconut and generous amount of jeera. Every day we prepare two varieties of vegetable side dishes for our lunch. Among those two varieties there must be a poriyal dish and the other one is kootu, aviyal or varuval.
