Aloo gobi (Potato Cauliflower sabji)

Aloo gobi (Potato Cauliflower) is a healthy and filling sabji with minimal flavours and ingredients. A great side dish for roti, pulav and nann which can be easily prepared within 15 minutes. My uncle (mother's brother) taught me this aloo gobi recipe. During my school days he taught me to prepare perfect rotis. Even now in our family, he is the master in preparing rotis. Not only in cooking he is having so many talents like painting, drawing, writing poems and stories. He started his career in Delhi so he was familiar with different varieties of sabjis, pulavs and rotis. One day he invited us for a dinner. For dinner, He prepared this Aloo gobi, roti and veg pulav within 30 minutes. He made this aloo gobi within 10 minutes and he served it with soft rotis, veg pulav and a bowl of veg salad. He had actually used simple, everyday, basic ingredients  to prepare this tasty aloo gobi.  




Now let's see how to prepare this Aloo gobi. This is a one pot dish and you can use either pressure cooker or pressure pan. Always try to choose cauliflowers which are tightly packed with less black spots. Make sure to use good quality white potatoes. There is no need for any additional flavours like ginger garlic paste, garam masala powder or coriander powder. I think the garam masala powder is unnecessary for this dish, but if you want  to add, you can sprinkle a little in the final stage. Lastly the main flavour in this dish is a handful of freshly chopped coriander leaves. For this dish no need to add any water. The potatoes and cauliflowers are sauted well in the oil and it has to be cooked with the little steam in the pressure cooker. Let's see how to prepare this recipe in detail.

Aloo gobi (Potato Cauliflower) is a healthy and filling sabji with minimal flavours and ingredients.

Ingredients

  •     1 medium cauliflower
  •     2 potatoes
  •     1 tsp cumins
  •     1 green chilly
  •     1/2 tsp turmeric powder
  •     1/2 tsp chilly powder
  •     1/4 cup chopped coriander leaves
  •     3 to 4 tbsp oil
  •     salt to taste

Cooking Directions

  1. Remove the leaves from the cauliflower and separate each floret. Put the cauliflower florets in warm water for 5 minutes. Peel the potato skin and cube them.
  2. Heat 3 to 4 tbsp oil in a pressure cooker or pan. Add the cumins.
  3. Allow the cumins to pop and then add the green chillies and the potato cubes.
  4. Cook the potatoes, stirring it frequently for a few minutes. After 4 to 5 minutes, add the cauliflower florets. Stir them well.
  5.  Next, add the remaining ingredients - turmeric powder, chilly powder and required salt. Stir everything well.
  6.  Reduce the heat to low and close the lid. After 2 minutes put the whistle. Cook for 3 to 4 minutes and turn off the heat.
  7. Open the cooker after 5 to 7 minutes. Add the chopped coriander leaves and transfer to the serving dish.

1. Remove the leaves from the cauliflower and separate each floret. Put the cauliflower florets in warm water for 5 minutes. After 5 minutes once again wash the florets in cold water and drain the water completely.

2. Peel the potato skin and cube them. Put it in a bowl of water. 


3. Heat 3 to 4 tbsp oil in a pressure cooker or pan. Add the cumins. (This sabji requires some good amount of oil).


4. Allow the cumins to pop and then add the green chillies.


5. Next, add the potato cubes. Cook the potatoes, stirring it frequently for a few minutes. 

 6. After 4 to 5 minutes add the cauliflower florets. Stir them well.

 7. Next, add the remaining ingredients - turmeric powder, chilly powder and required salt. Stir everything well.

8. Stir everything well. (No need to add any water)


9. Reduce the heat to low and close it with the pressure cooker lid. (For these type of sabjis choose a small 2 ltr pressure cooker or pan).


10. After 2 minutes put the whistle. Cook for 3 to 4 minutes and turn off the heat.

11. Open the cooker after 5 to 7 minutes. Add the chopped coriander leaves and transfer to the serving dish.


12. Serve it hot with roti, pulav or nann.

Seppankizhangu Poriyal - Taro Root (Arbi) Fry

Seppankizhangu Poriyal  - this poriyal is prepared with taro root, chilly powder, small onions cumin garlic paste and perfectly roasted in an iron kadai. The best cooking method for this taro root poriyal is to cook the taro roots in an open vessel for 10 minutes on medium heat with a good amount of water. No one likes a mushy taro root, so just keep an eye on it and check them for doneness by inserting a knife. If you cook taro roots in a pressure cooker, it will be too soft and turns mushy. For these types of roast dishes, low heat and long cooking times are important for its texture. The small onions cumin garlic paste, adds flavour to the taro roots. Semi Ripe Papaya Stir Fry - Pappalikkai Puttu (Poriyal)

This stir fry is prepared with shredded semi ripe papaya. This stir fry is easy to make within 10 minutes. This stir fry is similar to carrot puttu and beetroot puttu.    Semi ripe papaya is light orange in colour with a crisp texture and it has a very mild flavour. The shredded papaya is flavoured with green chillies, onions and finally garnished with fresh coconut. The semi raw papayas are peeled and the innermost white layers are removed along with their tiny seeds. Then they are cut into halves or quarters and  grate it using a slightly thick grater. After grating, we have to saute with mustard, chillies, onions and curry leaves. For this puttu dishes, like carrot puttu and beetroot puttu, the grated vegetables will need to be sauted first for an extra few minutes and then close and cook for 5 to 7 minutes. Here is the recipe for delicious curry with black chick peas popularly known as kadala curry in Kerala. One of my favourite side dishes for aapam and puttu. I learnt the base recipe from my friend Reshmi from Kollam but I tweaked it a bit. This kadala curry is prepared with simple ingredients like onions, tomato, freshly ground masala powder and coconut milk.
