Sarkkarai Pongal - this is a quick and easy dish for prasadam. And this Sarkkarai Pongal has also been an absolute favourite prasadam for many of us. The taste of this Sarkkarai Pongal, depend on the quality of the jaggery we use. I usually prefer pagu vellam for pongal and payasam dishes. The colour and taste of this jaggery vary from place to place. Some jaggery are dark brown while others are yellow or orange coloured jaggery. In this recipe, I have used the dark brown jaggery and it tastes so good. My husband bought me this dark brown jaggery (Kottayam Vellam) from Nanguneri. Drumstick leaves thuvaram (Drumstick leaves stir fry)



This drumstick leaves thuvaram is a unique side dish in South Indian cuisine. They're made with little cooked toor dal and ground coconut, jeera paste. Finally 1 tbsp of coconut oil is added to enhance the taste and it prevents the leaves to stick each other. This drumstick leaves thuvaram/stir fry is a best side dish for pulikuzhambu, sambar and any South Indian kuzhambu varieties. How to prepare Drumstick leaves thuvaram (Drumstick leaves stir fry)

Cook time: 10 minutes
Total time: 25 minutes
Yield: 1 cup
Ingredients
  • 1 bunch drumstick greens
  • 20 small onions
  • 4 tbsp cooked toor dal
  • 1/4 tsp turmeric powder
  • 1/4 tsp mustard
  • 1/4 tsp urid dal
  •  1 tbsp oil
  •  1 tbsp coconut oil 
  • salt

For Coconut paste 
  • 1/4 cup grated coconut
  • 4 small onions
  • 3 garlic
  • 1/2 tsp jeera
  • 1 dry red chilly
Grind all above ingredients with little water.  
Cooking Directions 

Clean and remove the leaves from the stem and  chop the small onions. 




Heat oil in a kadai and add mustard seeds and urid dal. When they splutters add the chopped small onions.


When the onions are soft add the washed drumstick leaves. Stir it continuously for few seconds. Then sprinkle a handful of water over the leaves and cook for few minutes on low flame. Do not cook covered with lid. Sprinkle some more water if necessary.




The volume will reduce as it is cooking. Now add the cooked toor dal, turmeric powder, salt and ground coconut paste. Now increase the flame and stir it continuously till the coconut mixture is well coated on the leaves.


Finally add the coconut oil and give a quick stir for a minute. Delicious drumstick leaves thuvaram is ready.
